OPEN HOUSE RECIPE
Fresh Peach Cobbler
Pastry:
2 cups flour
½ teaspoon salt
2/3 cup plus 2 tablespoons shortening
4-5 tablespoons cold water
Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal. Sprinkle water (1 tablespoon at a time) evenly over surface; stir with a fork until dry ingredients are moistened. Shape dough into a ball, and chill. Yield: pastry for one cobbler.
1 egg white, beaten
4 cups sliced fresh peaches (or frozen)
2 tablespoons lemon juice
¾ cup sugar, divided
2 tablespoons flour
¼ cup water
½ cup butter
Combine peaches and lemon juice; toss gently. Add ½ cup sugar and flour, tossing until coated. Spoon peach mixture into prepare dish; sprinkle with remaining ¼ cup sugar and water. Dot peaches with butter. Fold the excess pastry over peaches, leaving a 2-inch strip in center uncovered; dot pastry with remaining butter.
Roll pastry into 14 x 10 rectangle on a lightly floured surface. Transfer pastry to a 10 x 6 baking dish, centering pastry length-wise in dish, and allowing excess to hang over sides of dish. Brush pastry with egg white.
Bake at 425 for 35-40 minutes. Yield: 6 servings.

I'm baking a RUSTIC BERRY/PEACH PIE.
PREHEAT OVEN TO 450 DEGREES
Unroll a Pillsbury pie-crust on an ungreased square or round casserole baking dish.
In a large bowl combine:
One bag frozen mixed berries and half bag frozen peaches
1/4 cup pecans
Add 3/4 cup sugar
1/2 tsp. cinnamon
Mix above ingredients until fruit is well coated with sugar.
Pour mixture onto the pie crust and fold the crust up around the edges to create a "bowl" out of the crust.
You can use andegg wash to "paste" the crust in place.
Bake for 40 to 45 minutes until fruit is tender and crust is golden brown
SERVE WITH BLUE BELL HOMEMADE VANILLA ICECREAM
Be sure to use a deep baking dish!!!

Barb this looks good. If you drain your peaches what makes your juice?

Pecan Pie
• 1 cup Karo Dark Corn Syrup
• 3 eggs (beaten)
• 1 cup sugar
• 2 Tablespoons melted butter
• 1 tsp vanilla extract
• 1 ½ cups pecan
• 1 unbaked 9” deep dish pie crust
Preheat oven 350
1. Stir the first 5 ingredients thoroughly using a spoon.
2. Mix in pecans.
3. Pour into pie crust.
Bake on center rack of oven for 60 -70 minutes. Cool for 2 hours. Store pie in refrigerator.
Tips: Pie is done when center reaches 200 F. Tap center surface of pie lightly; it should spring back when done. For easy clean up, spray pie pan with cooking spray. If pie crust is over-browning, cover edges with foil.
High altitude adjustments: Reduce sugar to 2/3 cup and increase butter to 3 Tbsp. Reduce oven temperature to 325.

Fresh Pumpkin Pie
2 Cups fresh pumpkin (1 pie pumpkin)
1 cup sugar
3 eggs, beaten
2 Tablespoons flour
3 Tablespoons butter
1 teaspoon pumpkin pie spice
1 9" deep dish pie shell
to prepare pie pumpkin: cut top off pumpkin, turn upside down in microwaveable dish - nuke 15 min. - test for softness - nuke 5 min - should be done by now. let cool and scrap out of shell - run through food processor til smooth - measure 2 cups.
Mix all listed ingredients - you can add more spice to taste. Pour into pie shell - bake at 350 degrees til pie is "set" - and lightly browned. Better if made a couple days ahead and refrigerated.
