What is the best way to fry catfish ?
Deep fried catfish
Ingredients:
* corn oil for deep-frying
* 3 to 4 catfish fillets, about 1 to 1 1/4 pounds
* 1/2 cup cornmeal
* salt to taste, if desired
* freshly ground black pepper to taste
Preparation:
Cut each catfish fillet in half crosswise.
Combine the cornmeal, salt, and pepper in a shallow dish.
Dredge the fish fillets in the cornmeal, patting to make the cornmeal cling to the fillets. Drop the fillets in deep hot oil at about 370°. Cook 5 to 10 minutes, or until crisp and brown.
Serve with slaw, ketchup, and hush puppies.
Serves 4.

Pan fried catfish
4 (8-ounce) catfish fillets
1/2 cup yellow cornmeal
1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon creole seasoning
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
3/4 cup milk
6 tablespoons unsalted butter
Lemon wedges, for garnish
Directions
Rinse the fillets and pat them dry with paper towels. Mix the cornmeal, flour, salt, creole seasoning, paprika, and pepper together in a shallow dish. Pour the milk into a second shallow dish. Dip the fillets into the milk and then into the cornmeal mixture, coating them well and shaking of any excess.
Heat 1/2 the butter in a large skillet over high heat, and fry 2 of the fillets for about 3 minutes on each side, or until the fish flakes easily when tested with a fork.
Transfer the fillets to a serving platter and keep warm. Repeat with remaining butter and fillets. Serve immediately, garnished with lemon wedges.

Just in case you're catching your own....:)
After you have hung them up while still alive, tail down, slice around just above the tail in order to let all the blood drain out. Then cut out the dark meat. Those 2 things help a lot to take out the bad taste. Then do what Cindy said :D

If you are fry up a bunch then put a layer in whatever you are putting them in after taking them out of the grease and put a layer of sliced onions between each stack of fish.
Also... Cavenders All Purpose Greek Seasoning. Nuff said. :)

Best way is to soak in a pint of 101 proof Wild Turkey for six hrs turning every 2 hrs. Then rinse in water and roll in cornmeal and fry in Peanut Oil.

I prefer pond catfish.
I have eaten what my husband calls "mud catfish". They have a horrible taste.
And yeah...I agree with the others that peanut oil is best to fry them in.

We in da north enjoy catfish too. I use cornmeal to coat the catfish before pan frying it.
But I suspect the TX or LA catfish is better! :heeheehee
