I love grits. I like 'em thick with salt and butter. Thick enough that they won't fall off the spoon.

I love to mix them with my Egg's over medium. Yummy!:thumbsup

Sometimes I put white milk gravy over them with bacon when I have biscuits and gravy.

Never put sugar on grits.....ever!

I lived in Georgia for 6 months, even worked as a waitress at Shoney's...but I don't think I ever had any grits.

Now I LOVE Cream of Wheat and Malt-O-Meal! :thumbsup

Sweetening up Malt-O-Meal and Cream Of Wheat is fine... but not for grits.

CHTatum... never tried mushrooms, cheese etc... sounds like it would be good though... not sure about sauteed onions though.

It is sooo humid, you start to sweat almost as soon as you're done dryin' off after a shower, and your hair won't stay curled.

It THUNDERS, POURS RAIN, and FLASH FLOODS every time the sun goes down.

It has chiggers.

It has fire ants...and yes, I got bit!

Oh, and don't even get me started on the cockroaches!!! Eeewww

Oregon doesn't even HAVE cockroaches....Now that right there is the Promised Land!!!! :nod

Thought I'd post some different ways of making grits. Here's one. I don't like raisins though.







Fast & Hearty Breakfast Cereal
Cook this smooth and easy breakfast with milk instead of water for a nutrition bonus.

3 cups water or milk
3/4 cup Quaker or Aunt Jemima Enriched Hominy Quick Grits, uncooked*
1/3 cup raisins
1/4 teaspoon salt (optional)
1/4 cup firmly packed brown sugar
1/4 teaspoon cinnamon

Bring water to a boil. Slowly stir in grits, raisins and salt; reduce heat. Simmer 2 to 4 minutes or until desired consistency, stirring occasionally. Remove from heat; stir in brown sugar and cinnamon. Serve warm with milk, if desired.
4 SERVINGS

Quick Cheese Grits
An easy side dish that's even faster than rice or pasta.


2 cups water
1/2 cup Quaker or Aunt Jemima Enriched Hominy Quick Grits, uncooked*
4 oz. Pasteurized process cheese spread, cubed

Dash of garlic powder (optional)
Paprika

Bring water to a boil; slowly stir in grits. Reduce heat; simmer 3 to 4 minutes or until thick, stirring occasionally. Add cheese and garlic powder; continue cooking until cheese is melted, about 2 to 3 minutes. Sprinkle with paprika
4 SERVINGS
*NOTE: To substitute regular Quaker or Aunt Jemima Enriched Hominy Grits, increase water to 2-1/4 cups and simmer time to 12 to 14 minutes.

TIP: For those who love Baked Garlic Cheese Grits, but don't have the time to prepare them, here is a quick and delicious alternative.

Southern Scramble
Try this change of pace breakfast made easy in one skillet.


1-1/2 cups water
1/2 cup Quaker or Aunt Jemima Enriched Hominy Quick Grits, uncooked*
1 tablespoon margarine or butter

1 cup (4 oz.) shredded Swiss cheese
6 eggs, beaten
1 cup cubed ham
2 tablespoons sliced green onions
1/2 teaspoon salt (optional)
1/8 teaspoon pepper

In large skillet, bring water to a boil. Slowly stir in grits; reduce heat. Simmer 3 to 5 minutes or until thickened, stirring frequently. Stir in margarine. Combine 1/2 cup cheese with remaining ingredients; mix well. Pour into grits; stir lightly. Cook over medium heat until eggs are soft set and cheese is melted, stirring occasionally. Sprinkle with remaining cheese.
6 SERVINGS
*NOTE: To substitute regular Quaker or Aunt Jemima Enriched Hominy Grits, increase water to 1-3/4 cups and simmer time to 12 to 14 minutes.

TIP: Once grits and egg mixture are combined, do not over mix or eggs will become dry and appear curdled.

The Green Valley Spa's Shrimp and Grits
Recipe Created by Fio Antognini, Executive Chef, Green Valley Spa & Resort

Ingredients:
3/4 cup Quaker Instant Grits
3 cups water
1/4 roasted red bell pepper, diced
3/4 teaspoon curry powder

Dash of sea salt

1 tablespoon olive oil
2 tablespoons chopped onion
1/2 cup sliced mushrooms

1/2 lb. (8 oz.) raw, peeled and de-veined shrimp

1/4 cup white wine

1 1/2 teaspoons Dijon mustard

2 tablespoons fat-free sour cream
1 teaspoon low-sodium soy sauce

1 to 2 teaspoons hot sauce (your favorite brand: mild, medium or hot)

Chopped parsley for garnish


Cooking:
Prepare Quaker Instant Grits according to package directions. Add curry and bell peppers; stir well over low heat for 1 minute to allow flavors to meld. Cover and keep warm.

In a large sauté pan, heat olive oil. Add onions and cook for 2 minutes over medium-high heat stirring occasionally. Add mushrooms, stir to combine, and cook for 3 minutes. Add shrimp, stir to combine, and cook for 2 minutes. In a bowl, mix the white wine, mustard, sour cream, soy sauce and hot sauce. Pour mixture into pan while stirring with shrimp and vegetables. Simmer uncovered for 2 minutes.

To serve, ladle an even amount of grits onto 4 dinner plates, creating a large, thin “circle” of grits on each. Spoon the shrimp mixture onto the center of grits. Garnish each plate with a sprinkling of chopped parsley, and serve.

Optional garnish: crumbled turkey bacon

Yield: 4 servings

Green Valley Spa's Main Course Variation:
When adding the shrimp, add 1 cup frozen edamame (shelled soybeans).

Broccoli Cheese Grits
This colorful side dish can be ready in minutes.

1/4 cup finely chopped onion
1 tablespoon margarine or butter

2 cups water
2/3 cup Quaker or Aunt Jemima Enriched Hominy Quick Grits, uncooked*
1/2 teaspoon salt (optional)
3 cups chopped broccoli, cooked and drained or one 10-oz. pkg. frozen chopped broccoli, cooked and drained
1 cup (4 oz.) shredded cheddar cheese

Saute onion in margarine until tender. Add water; bring to a boil. Slowly stir in grits and salt. Reduce heat; simmer 2 to 4 minutes or until thickened, stirring frequently. Add broccoli; heat through. Remove from heat; stir in cheese.
6 to 8 SERVINGS

*NOTE: To substitute regular Quaker or Aunt Jemima Enriched Hominy Grits, increase water to 2-1/2 cups and simmer time to 12 to 14 minutes.

TIP: To keep grits warm for serving, transfer to 1-qt. oven-proof serving dish; place in 200° F oven.

When we go to Mexican places, they all try to talk to him and he doesn't know Spanish. He can "hear" it but not speak it.

When we go to the Indian reservation, they all think he is Indian. Which one grandmother was Camanche (sp?).

He has said he should go to Iraq and work and make the big bucks cause he would blend in and they would leave him alone. Wifey won't let him go, though!

Nah, he doesn't get upset. He's 50 years old and has heard it all his life. Lot of folks don't know the difference. Especially in the south, there are so many mexicans here now that people see him and they automatically assume he is.

I love grits. I like 'em thick with salt and butter. Thick enough that they won't fall off the spoon.

I love to mix them with my Egg's over medium. Yummy!:thumbsup

Sometimes I put white milk gravy over them with bacon when I have biscuits and gravy.

Never put sugar on grits.....ever!

We eat grits with butter and sugar and don't care what any of you think about it. ;p

I don't know if this is how the chocolate gravy I had was made, but I found this recipe online.


Chocolate Gravy

2 Tablespoons (heaping) cocoa

2 cups milk

1 3/4 cups sugar

2 Tablespoons (slightly rounded) flour

1 Teaspoon vanilla

Butter

shake of salt

Mix together all but milk in medium saucepan. Add enough milk to make paste. Stir in remaining milk (a little at a time) until smooth. Cook on medium until bubbling and gravy thickens. Stir in 1 teaspoon vanilla and a few pats of butter to taste.

Don't knock it til ya try it. Grits is just another form of ground up corn anyway, so there are literally many many ways of making it. I am sure the way y'all make it in the south is good too. Well, I may be wrong on it being corn. Never really looked it up, to be honest with you.

Hominy is corn that has been soaked (in something like lye) and the husks removed.

I do think that Denny's uses milk though which helps instant a little.

Well, I was thinking that maybe I could make either some chicken, pork, or beef, seasoned the way us Ricans like it, and add it to the patty. Maybe let it fry some on one side, add the meat to the center area, flip the whole thing over right quicklike and finish frying the other side.

Well, it's really not all that different than other seasonings. We have this stuff we make called "sofrito" that is basically onion, garlic, green pepper, cilantro, salt, pepper, comino, and anything else you'd like to add. We put it all in a blender, grind it all up, freeze it, and then use it on just about everything. There are other things we use too, like achiote (I think that's how it's spelled) that we use for red rice. We use several different types of bananas, including plantain. Plus there are various roots that I can't remember their names off the top of my head that are considered native Rican food. We use dried salt pork in our rice for flavor.

One of my favorite dishes is called tostones. Basically, they're fried plantain. Once you skin the plantain you cut it into slices and fry it in maybe a 1/4 inch of corn oil. When it's about half way done you take them out of the skillet smash them flat, and finish frying them. They're really good, sort of an appetizer, if you please.

Then there's pasteles. They are made mainly from ground up plantain and other bananas that you make into an almost oatmeal like consistency. Then you put some on some aluminum foil, add whatever meat you've prepard to the middle with maybe an olive or two, fold up the aluminum foil nice and neat, and then proceed to boil the whole thing until it's cooked. They're really good too.

Then there's bacalau, which is a dried, seasoned cod fish. That's always good with rice.

Man, I am hungry now and no pasteles in sight!

I love grits. I like 'em thick with salt and butter. Thick enough that they won't fall off the spoon.

I love to mix them with my Egg's over medium. Yummy!:thumbsup

Sometimes I put white milk gravy over them with bacon when I have biscuits and gravy.

Never put sugar on grits.....ever!

I like grits, but I don't get them often up in the Northeast.
