I can't tell you from experience but one would have to assume that a longer time in the marinate would be best for less tender cuts.

I am looking forward to the fall. I have been raising a Jersey steer for nearly a year and a half now and this winter he goes to freezer camp. A Jersey doesn't make as much meat as the meat breeds but it is said to be a very high quality meat with yellow fat and more intramuscular fat than other breeds.

We will see...

We learned real fast that select cuts aren't worth doing much with besides making carne asada for our burritos.

We usually marinate ours for a few hours in an Orange juice and spice mixture (Montreal steak seasoning, liquid smoke, fresh garlic, etc.)

Medium rare is the when it is best, medium is good too, but more than that you might as well save your money.

Dig, just be sure and put him on a corn buffet diet for 90 days or so...

We just use canned pineapple juice. The steak needs to be submerged or you can just put them in a big plastic bag and pour the marinate in there with them and put it in the ice box. Just flip them every once in a while.

Yes sir... I already have a ton of corn lined up. $150 per ton... that will give him all he wants for 90 days and I'll make chops out of the rest to feed my chickens.

You know meat tenderizer, the powder stuff, is made from pineapple. I like to use lime

Yeah we use lime on fajitas but not on regular steak. Also a lot of meat tenderizers have msg's so I'm trying to find alternatives. OJ, pineapple, lime, and some even say papaya are all natural tenderizers...
