It kind of boggles my mind as well, BUT below is and VERY interesting quote from Arlo Moehlenpah's book on Creation vs Evolution:
"Nearly all of the great mountain areas of the world have been found to have marine fossils near their summits. There is no conclusion possible other than that the mountains were once under water and have all been uplifted, essentially simultaneously, which accords well with the biblical Flood."
The author of this book has a PHD and is apostolic. He knowledge of science, geology and how they intertwine with the Bible is second to none. Reading his book really helped me to come to grips with things like, the flood of Noah, dinosaurs, young earth vs old earth theories.
