The water chestnuts don't change the flavor of anything, they just add a little crunch to the texture.

Exactly. I've eaten other chicken casseroles with water chestnuts but I've never used them in this one. I will have to try it.

For supper tonight, I am making scalloped potatoes with ham.
7 or 8 medium to large potatoes
1 can cream of mushroom soup
Some ham cut in small chunks
1/2 stick of butter
milk
salt and pepper
You need a 13x9 inch pan. Wash and cut potatoes in thin medallions. Put a layer on the bottom of the pan. Put dollops of cream of mushroom soup and butter and ham on the potatoes. Salt and Pepper. Put the next layer of potatoes on and repeat process until the pan is full. Pour milk in until you can see milk coming up the sides of the pan. Bake for 1 hour at 350 degrees. For more frugality, don't put in ham and use homemade cream of soup. If you use expensive deli ham for this, this dish could lose it's frugal status!~

For lunch and supper, I made soup.
2/3 head of cabbage, chopped
3 lbs hamburger
3 lbs potatoes, chopped
1 onion, chopped
about 1 tbsp celery seed
about 1/4 cup celery flakes
1 lb bag frozen corn
2 cans carrots
3-4 tbsp beef granules
pepper
water
I cooked the hamburger first, drained, then added to water with beef granules and seasonings already in it. Cooked on medium heat, added cabbage, cooked for 30 minutes, then added potatoes and onions. Cooked for about an hour, then added more water, corn, and carrots.
Was done in a couple hours from start to finish, and it made a lot! I had two large pots going. Took half a pot to my adopted sister and dad and there's not a lot left here. I didn't think my kids would eat it, but they loved it!

We are having a roast beef tonight with potatoes...we'll eat off this for at least one night then it will be made into stew that will last another couple of nights for us.

That's great! My scalloped potatoes were made with leftover ham. I bought a half ham that was on sale last week for $1.99 a pound. It was a hillshire farm precooked one. A great deal. About $10.00 for the whole thing. So, I cut it in half and we had ham two nights in a row and then this morning after church, I made fried cubed potatoes and cubed ham and scrambled eggs. Then, tonight I made scalloped potatoes and ham. I still have the other half in my freezer for later on.

Had this for supper tonight. We did not have any ham, so I left it out and used some bacon instead. Served it with crusty toasted french bread.
Chunky Potato Soup
Ingredients -
3 medium Red Potatoes
2 cups Water
1 small Onion
3 tablespoons Butter
3 tablespoons All-Purpose Flour
Crushed Red Pepper Flakes
Fresh Ground Black Pepper
3 cups Milk
1/2 teaspoon Sugar
1 cup shredded Cheddar Cheese
1 cup cubed Cooked Ham
Preparation:
Peel potatoes and cut into 1-inch cubes.
Bring water to a boil in large saucepan. Add potatoes and cook until tender. Drain, reserving liquid. Set aside potatoes. Measure 1 cup cooking liquid, adding water, if necessary; set aside.
Peel and finely chop onion. Melt butter in saucepan over medium heat. Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.
Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well. Add cheese and ham. Simmer over low heat 30 minutes, stirring frequently. Store leftovers, covered, in refrigerator.
