The bark was a wee bit on the not-completely-crispy side, but MAN OH MAN it turned out good. Very rich and it would have been heresy to put any so called "bbq sauce" on it. I was surprised considering it was a basic WalMart brisket cooked in a cheap Home Depot smoker with a tiny firebox using 5 bags of apple wood chunks that resulted in a completely unmanageable temperature (constant babysitting, constant fluctuations from 180 to 280, a cold front blew in and the wind was atrocious even reversing the air flow in the smoker numerous times) plus I placed it in a cooler and then passed out so it sat in the cooler for like 8 hours or something...
But thanks to Jesus it turned out as good (actually better) than any I've eaten at any "bbq place".
