Meal prepping for the week

(Healthy)

I have never really done it, but I am looking into it to avoid the rediculous rising cost of eating out, and even much more importantly, it’s nearly impossible to eat healthy when you’re eating out fast food. I’m looking into preparing enough healthy lunches ahead of time to last throughout the week. Is anybody doing this?


We live on farm fresh eggs, so that will be my first prep ingredient


EDB, do you cook up about 10 pounds of bacon to last throughout the week?

I I used to prep my lunch and dinner for the week, my breakfast I usually cooked fresh. I found it helpful especially if Im working away from home, Ive been gluten free for a long time, so going out to eat to fast food is usually a no anyways.
My family and I have recently adopted the old eating way of the farmers. Main meal is breakfast, then what used to be our dinner is now our lunch, and then we have supper around 5 in the evening which is something lite, (sandwich, cereal etc..) and nothing to eat after 6 in the evening.

My family primarily eat just meat, so no need to prep. Just pull what we need out of the freezer, thaw, cook, and eat. I don't eat between my two meals. First meal is breakfast, which is either a ribeye, or a pound of bacon, 12 raw eggs. Dinner is NY strip (fatty cut) followed by goat yogurt. Eggs are supplied by my chickens who are self sufficient, and eat one wanders around the back yard. I have a brother in the church who sells seafood and supplies me with all kinds of seafood. Even with that it's thaw and eat.

I do a lot of meal prep and freezer meal prep. One thing I like to do for lunches is to make mason jar salads. They keep for the week and the jars keep the veggies fresh and crisp. Put dressing in bottom of jar, then firm veggies, like broccoli, carrots, radishes. Next add softer vegetables or fruits, protein next. Top layer mixed greens. To eat, turn the jar upside down and shake to disperse the dressing. There's a large variety of recipes on the internet to keep it interesting.

As for eggs, if you have an instant pot, it is a great way to boil eggs for the week. Once cooked and peeled, store in mason jars in fridge. They will be good for 7 days.

Another make ahead egg idea is muffin tin egg bites. Mix eggs, a little milk, veggies, meat, cheese. Spray a muffin tin, add egg mixture and bake at 350 for about 20 minutes(depending on your oven). These freeze well.
