Fruitcake


2 (12 -16 oz) bags vanilla wafers, crushed (easily done in food processor or chopper)
1 (16 oz) container candied cherries, chopped
1 (8 oz) container candied pineapple, chopped
1 cup golden seedless raisins
2 1/2 cups chopped pecans (can mix a few walnuts)
1 stick butter, melted
4 eggs
1 1/2 cups (12 oz can) evaporated milk
1 tsp. vanilla
1 cup sugar

Combine crumbs, fruits, pecans in large bowl.
Beat eggs, butter, milk, vanilla, and sugar together.
Pour egg mix over fruit mixture, blend well until moist.
Line bottom of tube pan with wax paper. Grease sides
and bottom.
Pack cake mixture into pan. Bake 1 hour at 325 degrees.
Cool 5 to 10 minutes then remove from pan, tear off paper.
Cool completely and wrap tightly in foil.

This sounds wonderful! Saved the recipe. I usually make fruitcake cookies but this seems easy enough to give it a try.


I recently came across a coconut cake recipe that used crushed vanilla wafers instead of flour. Thought that was odd and now I see your fruitcake is made the same way. Look forward to trying it. Thanks!

YW! Hope it turns out well for you as well!

I was sort of skeptical about the vanilla wafers too, but, it
does work really well.
