A Quick Easy Low Sugar Pie Recipe..very tasty...

Randy's Low Sugar...Blueberry Sour Cream Pie....

Purchased Shortbread Pie Crust at Store in tin...(ready to go)

1 Package of Sugar Free Vanilla Jello Pudding
1 Can Blueberries in Light Syrup
1/2 Cup of Sour Cream
1/2 Cup of Cream Cheese
1 cup powdered Sugar...
Teaspoon of Vanilla

Mix the Pudding and pour into Pie Crust...Put in the fridge for about 1 hour...
Afterwards Drain the Blueberries and Spread on top of the Vanilla

Mix the Sour Cream/CreamCheese/Powdered Sugar together..adding a Teaspoon of Vanilla with a mixer on high....and spread on top of Blueberries...

Put in the Freezer for about 20 minutes....and then eat and refridgerate the rest....

Very good...

We have this (NOT low sugar version) at my family Christmas gatherings. My cousin and I named it "Blueberry Blob" and if my aunt doesn't bring it....she can't come! LOL

Thanks for the low sugar version! Don't know how really low sugar you might want to go, but, you can put Splenda through a blender until it actually becomes powdered. Then you can replace the powdered sugar with powdered Splenda. Just a thought.

Thanks Randy, my husband will love this and he is diabetic. He loves blueberries.

Blueberries in syrup means that this has some kick to a diabetic sugar level...

I would try to use fresh berries BOOMM.
I wonder if this would be good with peaches.
We have several peach trees.
