Chicago Style Stuffed Pizza


Dough Recipe

1 1/2 pounds (5 cups) bread flour
1 1/2 cups water
1/2 cup extra virgin olive oil
2 teaspoons active dry yeast
1 teaspoon salt


Filling:
2 cups Mozzarella cheese
1 cup provolone cheese
1 cup Havarti cheese
6 oz cooked (and chopped) Canadian Bacon (you can use whatever you like - sausage, meatball, bacon - your choice)


Sauce:
28 oz can crushed tomatoes
2 cloves of minced/crushed garlic (your preference - more or less)
2 Tbsp dried Italian seasoning
4 Tbsp shredded or grated parmesean cheese



In a stand mixer, mix together the water, oil and yeast until the yeast is fully dissolved.



Add the flour and salt.



Mix on low until most of the flour has mixed with the wet ingredients. Increase speed and knead until dough forms a cohesive ball and is smooth and silky, about 10 minutes.


Transfer dough to a large bowl and cover tightly with plastic wrap. Allow dough to double in bulk, about two hours.



About a half hour before the dough is ready, place the crushed tomatoes, minced garlic, and Italian seasoning into a food processor. Run it on medium speed for about a minute and pour into a sauce pan. Heat on low for about 20 minutes. Add the parmesean after 10 minutes. stir often and do not let it boil.


When the dough has doubled in bulk, punch it down and knead it briefly (about 1 minute). Remove 1/3 of the dough and place it back in the bowl, covering tightly.



Roll the large portion of dough out into a 16" circle. Place the dough into a lightly greased 15" x 2" round deep-dish pizza pan. The dough should come up 2" on the sides.



Fill the dough shell with the filling mixture, but save about an ounce of ham for the top.



Roll out the remaining dough into a 14" circle and place it on top of the filling. Pinch the top and side edges together to seal. Prick the top with a fork to allow steam to escape.



Let the pizza rise an additional 15 minutes in the pan before baking. Bake at 500-degrees F. for 15 minutes, then lower the temperature to 400-degrees F. and bake for 20 to 25 minutes.



Add the sauce (you'll probably have some left over) and the leftover ounce of ham on top of the crust during the last 10 minutes of baking time.

Chicken Alfredo Pizza

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients

1 lb pizza dough, store-bought or homemade
1 1/2 cups cooked or grilled, shredded chicken
2 Tbsp butter
1/4 tsp garlic powder
1/8 tsp onion powder
1 Tbsp flour, plus more for dusting
1/2 cup + 2 Tbsp heavy cream
1/2 cup + 2 Tbsp whole milk
2 oz finely shredded Parmesan cheese (1/2 cup)
Salt and freshly ground black or white pepper, to taste
cornmeal, for dusting
4 oz shredded Mozzarella cheese (1 cup)
6 slices bacon, cooked and chopped
1 Tbsp extra virgin olive oil
1 1/2 Tbsp chopped green onions

Directions

Preheat oven to 425 degrees. Place a pizza stone in center of oven to heat while preparing toppings for pizza (for at least 30 minutes).

Melt butter along with garlic powder and onion powder in a medium saucepan over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. While whisking vigorously, slowly pour in cream and milk. Bring mixture just to a gentle bubble stirring constantly. Allow mixture to gently boil for 20 seconds, stirring constantly. Remove from heat, add in Parmesan cheese, season with salt and pepper to taste then return to warm heat and stir occasionally until ready to use.

To assemble pizza:

On a floured work surface, flatten, stretch and shape pizza dough into a 13 to 14-inch round, while creating a thicker outer crust. Sprinkle a wooden pizza peel with flour and cornmeal and transfer shaped dough to pizza peel, reshaping dough as need. Remove pizza stone from oven, sprinkle lightly with cornmeal then carefully slide shaped pizza dough from pizza peel onto hot pizza stone. Pour half of the Alfredo sauce over dough round, then use the back of a spoon to spread into an even layer coming within about 1-inch of the edge. Sprinkle shredded chicken over sauce layer, then pour remaining sauce evenly over chicken. Sprinkle top evenly with Mozzarella cheese then sprinkle with chopped bacon. Brush outer crust with olive oil and season crust lightly with a pinch of garlic powder and salt. Bake in preheated oven 14 - 16 minutes until crust is nicely golden. Remove from oven, garnish top evenly with green onions, cut into slices and serve warm.

I am going to try out this more healthy version of Alfredo Sauce using cauliflower before I add it to this pizza.

Healthy Fettuccine Alfredo

Ingredients

1 lb. uncooked fettuccine noodles
3 small heads cauliflower
6 cups vegetable broth
6 cloves garlic, minced
1 tablespoon butter
1 teaspoon salt
pinch of nutmeg
pinch of black pepper
1 tablespoon olive oil
¼ cup heavy cream
1 cup starchy boiling water from pasta pot

Instructions

Chop the cauliflower. Bring the vegetable broth to a boil over medium high heat and add cauliflower. Cook until cauliflower is soft, about 15 minutes. In my experience, the longer you cook it, the smoother the sauce will be. Meanwhile, melt the butter in a large skillet over medium heat. Add the minced garlic and saute for 4-5 minutes or until soft and fragrant.
As the garlic and cauliflower are cooking, bring a large pot of water to boil and cook the fettuccine according to directions on package, reserving some of the starchy water to add to the sauce later.
Transfer cauliflower to a blender with about 2 cups of the broth. You may need to do this in batches depending on the size of your blender. Add the sauteed garlic, salt, nutmeg, and black pepper and puree until very smooth, about 5 minutes. Once the mixture is moving, stream the olive oil into the blender. Add more broth or water if the mixture is too thick to move through the blender. You want it to turn through the blender easily. When puree is very smooth, transfer back to the butter/garlic skillet.
Add the cream and cook over low heat. Add the starchy pasta water (or regular water if you’re not making pasta) and keep warm until ready to serve. Combine noodles and sauce in a large pot or skillet and serve immediately.

I never got around to the enchiladas on my Mexican Recipe thread. My husband hasn't been working and has been eating a lot of breakfast tacos. Way too much cheese to have that for dinner as well. Hope he goes back to work soon! :heeheehee

Ronzo, I don't like pizza with red sauce, but I might have to try this. Wonder if I can make it with ranch dressing instead of the red sauce?? hmmm.......

Me too! We are making jalapeno jelly today. Have so many jalapenos from the garden, we need to do something with them. I talked him into using organic sugar and apple cider vinegar. That was a huge step. :heeheehee

Roasted garlic sauce topped with chicken, red onions, and herbs.

Ingredients
1 pound pizza dough
1 Tbls butter
8 cloves roasted garlic, minced
2 Tbls all-purpose flour
½ tsp black pepper
½ cup skim milk
¼ cup half and half
¼ cup Parmesan cheese
1½ cup boneless skinless chicken breast, cooked and shredded
¼ cup red onion, diced
¾ cup Mozzarella cheese
1 tsp fresh thyme, chopped
½ tsp dried oregano
1 Tbls fresh parsley, chopped

Instructions Preheat oven to 450 degrees. Prepare a baking sheet with a siplat liner, or grease and sprinkle with cornmeal. Melt butter in a small saucepan. Saute roasted garlic for 1 minute. Add flour, and mix until well blended. Cook for 1 minute. Slowly whisk in the milk and half and half. Mix in the pepper. Cook for about 3 minutes, or until it starts to thicken. Remove from heat, and stir in Parmesan cheese. Spread dough into roughly a 12 inch circle on prepared baking sheet. Spread white cause over the dough. Top with chicken, red onions and cheese. Bake for 17 minutes, or until the crust is golden, and the cheese is melted. Remove from the oven, sprinkle with herbs. Cut and serve immediately.

You are welcome, Margie. They don't specify how they cooked the chicken but, I know that Chicken Breast is not going to have a good flavor if it's not cooked right - either grilled or sliced into strips and cooked in an iron skillet with seasoning and olive oil. :thumbsup

Chicken Alfredo Pizza

Used food processing pizza dough recipe - also posted on page 1 :thumbsup

Baked pizza crust for 6 minutes before adding toppings, brushed olive oil on sides of crust after adding topping and putting back in oven.

I cooked the seasoned chicken (salt, pepper, garlic and onion powder) in olive oil in an iron skillet. Also added in sliced red pepper.
