Please help!
I am having some guests this weekend that includes two diabetics- one is a very strict diabetic...
I was looking through a previous thread on diabetic recipes, but some used Cool-Whip...
This may be a dumb question- but is Cool Whip OK? Or was that just intended in moderation?
In addition, I need some super easy dessert recipes that would work for a 'very strict diabetic diet'. I did notice the few on another thread but the cool whip in them threw me off...
Obviously, I do not know much about this- I do know, however, that I do not want to send my diabetic guests into comas!!!

What is the sugar content of Cool Whip? Anything with a lot of sugar will cause their blood sugars to spike. The key is to be moderate and not let them rise too high or sink to low. Can you make a 'whip cream' from something low in sugar and add an artificial sweetener?

Definitely! My dad was a diabetic, and really, you just want to avoid sugar altogether, and even foods that convert into sugars quickly, such as starches like bread or potatoes.
Of course, if your sugar gets low...then you have to bring it up with something sweet or starchy! It's a constant balancing act.

I was diabetic before the weight loss. I'm 99% better but still have to keep things at moderate levels.

Congratulations on your weight loss! Diabetes is no laughing matter, I'm glad you were able to at least reduce your symptoms.

I'm convinced it will be a life-long struggle. It's been 3.5 years and I feel so much better (just did 6 miles on the elliptical) but it will always be an issue not to raise food/eating to the level of deity.

Miss Brattified has it right. Just watch the breads, pasta, potatoes and sugar including fruit. You can use sweet potatoes, whole wheat breads, and pastas. Be careful about Splenda- some diabetics cannot tolerate it. Fruits that diabetics can eat are the berries- like blueberries, strawberries, and blackberries.

First off...thank you all so much!! Some of the points you mentioned, I never even knew was an issue...like pasta, etc!!
...and sugar free cool whip- ohhh!!!!!!:blink
I really appreciate the comments...I never realized just how much diabetes affects the diet, or the creative 'alternatives' to make great dishes.
My simple mind was in the 'no sugar' mode!!

Here is a recipe that I like, some people use it as a fruit salad to compliment a meal but I like it as a simple dessert.
Orange Pineapple Delight
1 box of sugar free orange Jello
1 reg size sugar free cool whip
1 can of pineapple chunks in it's own juice---I use Dole
1 can of Mandarin Oranges in it's own juice
Mix cool whip and jello powder until thoroughly mixed, set in frdge for two hours
drain well and then add both cans of fruit. Mix and set in fridge another hour, or until set again. mmm very good!

Look up Atkins diet and see if you can find receipes there . Diabetics will eat what they can and skip over othere things so don't make a big point of special for tehm , just try to make vegetables and fruit things , and not alot of pasta ,white potatoes However you can make some they will eat lightly of it or takea alternative and a GREAT alternative is SWEET POTATOES without added sugar , I but sweet potaotes already cut and peeled at Costco CHEAP and they are delicious raw and baked with a little oilive oil drizzeld .

I would encourage everyone to look up SUGAR FREE , almost all sugar fee products are ASPARTAME and that is WORSE then real sugar for you , there are SAFE alternatives , Stevia and Xylitol which can be found at health food stores , I have only found one Stevia I really like it is STEVITA brand ,it also comes loose powder or in little packets like Equal . Xylitol is loose and looks just like sugar and you use it in baking justa s you would sugar cup 4 cup .etc. Stevia is also a healthy benefit to the body and teeth .Check these out on the Google .
