View Full Version : A Soft Sugar Cookie Recipe...

I'm going to make cookies this weekend for the minister's and wives retreat at our church and I can't find a good recipe for a soft sugar cookie...is there anyone who can help me. Also I need a good icing recipe for them too.

Good Sugar Cookies

3/4 bup butter
1 1/2 cups sugar
2 eggs
1/2 cup sour cream
1/2 t. vanilla
3 cups flour
3/4 t. salt
1/2 t. soda
1/2 T. baking powder

Cream butter, add sugar gradually, add eggs one at a time. Mix well. Add flavoring to sour cream. Sift together flour and dry ingredients. Add cream.

Can be dropped by spoon or rolled out and cut.

Chill. Bake at 350 for 10-12 minutes - frost!

If you store them with a slice of bread it will get very hard and keep the cookies soft.

* 1/2 teaspoon almond extract
* 2 cups all-purpose flour
* 1 teaspoon cream of tartar
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/4 teaspoon ground nutmeg


* FROSTING:
* 1/4 cup butter, softened
* 3 cups confectioners' sugar
* 1 teaspoon almond extract
* 2 tablespoons hot water
* Food coloring



DIRECTIONS

1. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs, vanilla and almond extract. Combine the flour, cream of tartar, baking soda, salt and nutmeg; gradually add to creamed mixture.
2. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes or until light brown. Remove to wire racks to cool.


3. For frosting, in a large mixing bowl, combine the butter, confectioners' sugar, almond extract and enough water to achieve desired consistency. Tint with food coloring if desired. Frost the cookies.

Butter Cream
1 box powdered sugar
1/2 cup butter, softened
6 T milk
1 t. almond extract

Or substitute shortening for butter.

This is the one I use because it's easy and I don't do the rolling out and cutting thing! My niece called me after Christmas to get my recipe, she loved them so much.

I want to make this but not sure how to do it without mixing the two layers.....Anybody smart enough to tell me how to do it or got a recipe for something like that.

You have to wait until the jello is set. Then just layer.

This thread made me think about my Grandmother's Old Fashioned Tea Cakes. Here are some recipes for those from cooks.com


GRANNY'S OLD - FASHIONED TEA CAKES

1 1/2 c. plain flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. sugar
1/4 c. butter
1 egg
3 tbsp. milk
1/2 tsp. vanilla flavoring

Cream butter; add sugar and well beaten egg. Add salt and flavoring. Sift flour and baking powder. Add slowly to mixture, alternating with milk until mixed. Roll 1/8 inch thick and cut with biscuit cutter. Bake at 350 degrees for 10 to 15 minutes.

This recipe is for 9 to 10 dozen:
OLD FASHIONED TEA CAKES

1 c. butter
2 c. sugar
3 eggs
4 c. flour
2 tsp. baking powder
1 tsp. vanilla
1/8 tsp. salt

Cream butter and sugar. Add slightly beaten eggs, flour, baking powder, vanilla and salt. Roll on floured board and cut. Sprinkle with sugar and bake at 400 degrees for 12 to 15 minutes.

Makes 9 to 10 dozen depending on size. This will make a fairly thick tea cake. For thinner, roll dough thinner.

1/2 cup butter or margarine, softened
1 egg
Filling
1 cup white vanilla baking chips (6 oz)
1 package (8 oz) cream cheese, softened
Topping
4 cups sliced fresh strawberries
1/2 cup sugar
2 tablespoons cornstarch
1/3 cup water
10 to 12 drops red food color, if desired


1. Heat oven to 350°F. Spray bottom only of 15x10x1- or 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press evenly in bottom of pan. Bake 20 to 25 minutes or until light golden brown. Cool completely, about 30 minutes.
2. In small microwavable bowl, microwave baking chips uncovered on High 45 to 60 seconds or until chips are melted and can be stirred smooth. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended. Spread mixture over crust. Refrigerate while making topping.
3. In small bowl, crush 1 cup of the strawberries. In 2-quart saucepan, mix sugar and cornstarch. Stir in crushed strawberries and 1/3 cup water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Stir in food color. Cool 10 minutes. Gently stir in remaining 3 cups strawberries. Spoon topping over filling. Refrigerate 1 hour or until set; serve within 4 hours. Store covered in refrigerator.
High Altitude (3500-6500 ft): No change.

1 cup cool whip
2 small pkg instant chocolate pudding
3 cups milk
coolwhip

Directions

Add the flour, sugar and most of the nuts. (save a few for garnishing at the end)
Press into a 9 x 13 and bake at 375 degrees for 15 minutes. Cool.
Cream together the cream cheese, powdered sugar and cup of cool whip.
Spread this mixture over the cooled crust and chill in the frig.
Mix together the instant pudding and milk for 2 minutes. Spread over the second layer. Cool.
Last layer - top with cool whip and sprinkle with nuts. Serve well chilled.

I make one like that, but my crust is butter, pecans, flour - - it would be pretty for Valentine's!

Thank you so much, I have been looking for a good recipe since I lost mine.

My Grandmother would keep them in a huge cookie jar on top of the "buffet"....I'd sneak around and get an "extra or two" out of the jar when she'd leave the kitchen. This involved moving chairs or stacking books to be able to reach them. Then I'd have to "rearrange the remaining" cookies in the jar so that hopefully she'd never know. :blush Open confession is good for the soul!

Fluffy Chocolate Dessert

1/2 c. butter (softened)
1 c. flour
1/2 c. confectioner's sugar
1/2 c. chopped walnuts or pecans

First Layer:
1 pkg (8oz) cream cheese, softened
1 cup sour cream
1 (8 oz) carton Cool Whip (thawed)

Second Layer:
3 cups cold milk
2 pkgs. instant chocolate pudding mix

Topping:
1 (8 oz) carton Cool Whip (thawed)
1 Tablespoons ground Walnuts or Pecans

In mixing bowl, cream butter. Add flour and sugar, blend until crumbly. Stir in walnuts/pecans. Press onto bottom of 13x9x2-in baking dish coated with cooking spray.

Bake at 375 for 10 - 12 min. or until set. Cool.

In mixing bowl, beat cream cheese and sour cream. Fold in Cool Whip. Spread over crust.

In another mixing bowl, combine milk and pudding mixes, beat on low speed for 2 min. Spread over first layer.

Carefully spread Cool Whip topping over second layer. Sprinkle with nuts.

Chill at least 1 hour.

Add the flour, sugar and most of the nuts. (save a few for garnishing at the end)
Press into a 9 x 13 and bake at 375 degrees for 15 minutes. Cool.
Cream together the cream cheese, powdered sugar and cup of cool whip.
Spread this mixture over the cooled crust and chill in the frig.
Mix together the instant pudding and milk for 2 minutes. Spread over the second layer. Cool.
Last layer - top with cool whip and sprinkle with nuts. Serve well chilled.

Mexican Wedding Cookies

This is the one that I use:

Ingredients

2 small pkg instant chocolate pudding
3 cups milk
coolwhip

Directions

Ha Ha...actually we are leaving for Mattoon, IL on Wed to preach and then attend their annual marriage retreat.

Then in March we are going to Silsbee, TX to be with Bro. Doug White, which will be a TOTAL blast. They are wonderful people and really great friends.....I can't wait to be with the Doughty's (and HO and her daughter) and then to be with the Whites....

This is bakery quality!!!! I found the recipe in a Food and Wine magazine.

Vanilla Bean Cheesecake with Walnut Crust

1 1/2 cups walnut pieces
1 3/4 cups sugar
4 Tablespoons unsalted butter, melted
2 cups sour cream
1 Tablespoon pure vanilla extract
2 pounds cream cheese, softened
1 vanilla bean, split lengthwise, seeds scraped
4 large eggs, at room temperature
1/4 teaspoon pure almond extract
1/2 cup heavy cream

Preheat oven to 350. Butter a 10-inch springform pan. In a food processor, pulse the walnuts with 1/4 cup of the sugar until finely ground. Add the butter; pulse until the mixture resembles moist sand. Press the crumbs into the bottom of the pan. Bake for 12 minutes, or until browned around the edges.

In a small bowl, mix the sour cream with 1/4 cup of the sugar and 1 teaspoon of the vanilla.

Reduce the oven temperature to 300. In an electric mixer fitted with a paddle or using a handheld mixer, beat the cream cheese at low speed with the remaining 1 1/4 cups of sugar and the vanilla seeds just until combined. Beat in the eggs, 1 at a time, scraping down the bowl between additions. Add the remaining 2 teaspoons of vanilla and the almond extract. Slowly beat in the cream until smooth. Pour the cheesecake batter into the pan and bake for 65 to 70 minutes, until lightly golden and slightly jiggly in the center.

Immediately pour the sour cream topping over the cheesecake and smooth the surface. Return the cheesecake to the oven and bake for 5 minutes longer. Transfer to a rack and let cool to room temperature. Run a sharp, thin-bladed knife around the cake and remove the ring. Refrigerate the cake for 3 hours, the cover loosely with plastic wrap and refrigerate overnight before serving.

Note: Make sure that you refrigerate the cake overnight to allow blending. I promise, it does not taste as excellent if you serve it without refrigerating it first! Three hours is nice, but overnight is awesome.

Ok..I haven't panicked yet, but I'm about as close as you can get and still be sane (that's questionable, I know) but anyways I may not have ordered enough food. DS told me to plan for 40-50..well being the prepared one, I ordered for 55. Ok, so I go to the hotel today just to make sure everybody's got a room and all the good stuff .....belt and suspenders....anyway she said "you have 12 rooms for your group and then we have a group of at least 10 rooms coming from Wichita" I like to have croaked ok that makes...let's add it up folks....2 people in each room that makes just 44 people and that's not including my husband and our 4 preachers and their wives and I know of at least 3 more couples....soooooooooo

44 +10= 54 + 6= 60 people and couple of families are bringing kiddos, so I'm NOW PANICKED!!!!!!!!!!! OH Jesus help me.

Ok, I called the guy who is catering and said "I'm about to have a cat with claws......I'm not panicked yet, but close, and told him I may have more people. He said "No problem, what time is church over....call me and let me know how many you have coming and I'll make adjustments..I come in at 3:00 A.M. anyways, so just leave me a message....

Still panicked guys, not helping here....Ya'll need to pray.....arrggghhhhhhh:foottap Why do I listen to men anyways, next time I'll just plan my own thang....HOLY COW!!!!!!!!!!

If you requested for 55 I'm almost sure that you'd have enough for 60. Caterers always allow for a few more. Plus, women "tend" to not take as much anyway, so that naturally gives you a bit more.

Chill out - - I'm sure it will all fall into place. Serve the plates yourself and then you have portion control that way.

a few years ago we would do a "Totally Gross Out" room for the kids at the Fall Fest every year. We would make the most disgusting looking treats. The kids loved it. We would do Kitty Litter Cake, Vomit Candy, Brain Jello molds and so on.

Sounds like this recipe would fit right in!
