Since we seem to be concerned with where people are going....


I went to lunch today at a Mexican grocery store! SERIOUSLY! $4.16 I got a belly full of some really good mexican food.

I thought I died and ended up at the Mexican marriage supper of the lamb!

YUMMY!

We got our first cold snap late monday night. Yesterday was nice. and FERD MADE GUMBO!!!!

That first pot of Gumbo in the fall is soooooo awesome!

Wow, that seems to be quite a haul from your office. That's in an area I'm very familiar with since I'm originally from G-town. And Mexican is my second culture, behind the Irish/German frontrunners. :heeheehee

I love good Mexican food. If you're ever here in Allen, you've GOT to try La Finca Chiquita (http://mychiquita.com/). It's a small hole-in-the-wall place kind of off the beaten path. But, boy is it good!

Being where your office is, you're probably familiar with Amigo's, on Belt Line between Plano and Bowser Rds. Never been there myself, but their sister restaurant in Plano, Casa Mamas (http://www.casa-mamas.com/), at 14th & Los Rios is very good also. Ive never been to Amigos. I have been to what used to be known as the Plano Tortilla Factory. That place is great.

I will be trying some of these soon!

Walnut and Jupiter is only about 15 minutes from the office. Not too bad.

There is also an off the hook Vietnamese/Chinese place down at Walnut and Plano Rd. called Bistro B. LOVE that place!

I love good Mexican food myself.But there are somethings I can't eat cause they don't agree with me. I love Jalapenos and sometimes I eat them anyways,but they take me to heartburn city.

One thing I was wise enough to know early on was to not wish for the future.

People would ask "i bet you cant wait until he is potty trained or when he can do this or that.


Ive always just been content to enjoy every stage at the time. I am in no hurry for them to grow up. It seems time moves to fast as it is.

Every moment is precious. It will be too soon they will be going off to college and building their own lives. I am not about to wish away the time i have right now.

Same with my daughters. As challenging as it can be at times, they're at such an innocent age (even though they have their own mischievous ways) I'm not in any hurry for them to grow up...

Jack is ok. We need to get to June of next year with no tachicardia. if we can we will go off one of his meds. then see how things go.

we are getting closer to the day when we have to do the ablsion (sp). another couple of years would be nice but there is some indication that his medicine is impacting his thyroid. we test that once a month now. so far not serious so we keep an eye on it and keep moving forward...

besides that Jack is an absolute mess and a joy. He is too cute for his britches and way too much for any one adult to handle! LOL!

If it's Mexican, it's genuinely authentic Mexican food. Tex-Mex isn't so much Mexican, but more with a Texas twist to it.

I suppose Tex-Mex is more of a watered-down version of the real thing, but still good nevertheless...

Well, since you want to be difficult (haha, I'm only kidding), Chili's is Tex-Mex or has a Tex-Mex menu as opposed to one restaurant I mentioned, La Finca Chiquita here where I live. It is wholly authentic Mexican food and some of the best I've ever eaten...

Usually, your smaller, independent eateries (not part of any chain) will be authentic. At least that's been my experience here...

Most real Mexican taco meats are stews. hard taco shells are a tex mex thing. so are most flour tortillas.

One good rule of thumb. if everyone around you cant speak english its likely Mexican. if it is a big well known resturant, its tex mex.


unless you are in San Antonio... then all bets are off! LOL! Some of those folks have been Americans since before America was America and Texan longer than that! There food however is outstanding.

Correction to my above post: it was La Paloma Riverwalk that we ate at and I experienced good guacamole as well as excellent food. I knew something didn't sound right with the other restaurant, so I pulled up the listing of riverwalk restaurants and LPR caught my attention...

I've eaten at Casa Rio since I was a child! Anytime my family meets in San Antonio, we meet at Casa Rio! Fond memories of feeding the fish bits of flour tortillas. :thumbsup

Very nice!

We've been down to SA a few times with my oldest and only once with my youngest. I think we're due for another trip, and all this talk of good Mexican food has me craving a trip down there even more... :)

I have an excellent Spanish Rice recipe, the only one my husband loves. It was posted in Texas Highways, years ago, from Mi Terra. Love eating there as well.

Oops, correction, it wasn't Mia Terra, it was El Mirador.

El Mirador Rice

3/4 c. long-grain rice
1 tsp. lemon juice
2 T. vegetable oil (I use peanut oil)
1 medium onion, peeled and chopped
2 medium tomatoes, chopped
2 medium bell peppers, chopped
1 large clove garlic, minced
1 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. pepper
1 T. Chicken bouillon granules

Cover rice with hot water. Sprinkle lemon juice over rice. Soak rice for 5 minutes; drain and rinse in cold water. Drain well.

Heat oil in skillet. Saute' rice until golden.

Stir in onion, tomato, bell pepper, garlic, cumin, salt and pepper. Saute' 2-3 minutes.

Stir in chicken bouillon granules dissolved in 1 cup very hot water. When mixture boils, cover, reduce heat, and simmer 15 minutes.
Do not remove the lid. Fluff rice, and serve. Yield: 6-7 cups.

Lunch was not great today. Had chinese. normally this place I went to is really good but not so today. It was rather disappointing.

Cilantro-Lime Jalapeno Chicken Salad

3 large chicken breasts
poaching liquid (chicken stock, water, carrots, celery, onion, herbs, bay leaf, peppercorns)
1 jalapeño diced (with seeds scraped out)
4 Tbs cilantro coarsely chopped
1 lime, juiced
1/4 red onion diced fine
1/3 cup mayo (plus a little more if needed)
1 Tbs Dijon mustard
1 tsp cumin
salt and pepper
2 ripe avocados (or for a sandwich good French or Italian bread)

Season chicken with salt and pepper and *poach. Remove chicken from liquid and shred with a fork.

Once chicken has cooled add mayo, Dijon, cumin, lime juice, salt and pepper and incorporate. Add more mayo and lime if necessary. Mix in red onion, jalapeño and cilantro. Cool in fridge for several hours to let flavors merge and serve with avocado or for a sandwich on French bread with a slice of provolone.

*To Poach – In a medium pot add chicken breasts to the poaching liquid. The chicken should be completely immersed. Bring to a boil and then immediately reduce heat and partially cover. Reduce heat to a simmer for 10 minutes. Remove from heat and chicken remain in the liquid for about 15 minutes. Reserve the liquid for future use.

On Sunday after church, i was sucked into a trip to Red Lobster. Now going to this resturant is not generally on the short list as Mrs. Ferd doesnt like to eat things that swim. I dont think she would eat beef if you told her the cow took a swim before being off'ed...

But they have chicken on the menu and everyone else wanted to go because it was their "all you can eat shrimp" deal.

Mrs. Ferd got her usual chicken alfredo dish.... by ususal I mean all three times we have been there in 16 years of marriage, this is what she has gotten.

one word. NASTY.

They were very kind and took it back. (good news)
(Not so good news) the replacement dish of chicken sammich had a side with hair in it.

they comped her meal and got her hair free food (better news)

We ordered mac-n-cheese for little boy Ferd. cost five bucks. Turns out to be a single serving easy-mac. NOT HAPPY about this.

Now to the shrimp.... it was ok. Not great. Not good. just passible. their "hand breaded" fried shrimp really looked like little pre-breaded popcorn shrimp.

The scampy was long on butter and short on shrimp.

We've usually really liked Red Lobster whenever we've gone. We don't go that often though because of the price but their lunch's are a much better deal.

Our favorite places is a three way tie between PF Changs, a small local chain called My Big Fat Greek Restaurant and another chain called AJ's Brewhouse (which have some excellent 'brews' of their own!).

On Sunday after church, i was sucked into a trip to Red Lobster. Now going to this resturant is not generally on the short list as Mrs. Ferd doesnt like to eat things that swim. I dont think she would eat beef if you told her the cow took a swim before being off'ed...

But they have chicken on the menu and everyone else wanted to go because it was their "all you can eat shrimp" deal.

Mrs. Ferd got her usual chicken alfredo dish.... by ususal I mean all three times we have been there in 16 years of marriage, this is what she has gotten.

one word. NASTY.

They were very kind and took it back. (good news)
(Not so good news) the replacement dish of chicken sammich had a side with hair in it.

they comped her meal and got her hair free food (better news)

We ordered mac-n-cheese for little boy Ferd. cost five bucks. Turns out to be a single serving easy-mac. NOT HAPPY about this.

Now to the shrimp.... it was ok. Not great. Not good. just passible. their "hand breaded" fried shrimp really looked like little pre-breaded popcorn shrimp.

The scampy was long on butter and short on shrimp.
the parm shrimp was scampy with breadcrumbs and parm cheese.
the shrimp lingueny (sp) was aweful
The only thing that was even close to a "I would order that again" was the sweet and spicy shrimp.

on the other hand I have found a place I dont need to return to.

hanging with my sisters was great though...

I like to go to Red Lobster from time to time. My wife likes the crab legs and I always order the Admiral's feast minus Clam Strips... add more bay scallops. Yep... It's usually pretty good.

I'd consider the all you can eat shrimp thing but the Admirals Feast is a dollar more and I take food home. Taking food home is better than all you can eat but you can't take any home. But it does sound like they are getting more varieties of shrimp. I generally can only find one... MAYBE two that I care to sink my teeth into. Uh... coconut on shrimp dipped in a sweet sauce? I was born SOUTH of the mason/dixon line and sweet and meat only go together in mincemeat pie and that's because there isn't really any meat in there.

Of course the main reason we take food home is because we usually order the Fried Veggies & Calamari. When they do it right that is good. They, apparently, fry up a big ol' batch from time to time (During the day I hope). Sometimes it's real good... crunchy and fresh. Sometimes it's mostly fried batter... When the latter is true I tend to hear them say that this was the end of the batch and they'll fry up another one... and it is usually good. So you learn things when you listen to the wait staff sometimes.

But... Red Lobster used to be a big to-do (at least to the country folk we were) but now it's become a second rate restaurant that has yet to realize that they should charge second rate prices.

One place I've never been but have always wanted to go to is Ruth Chris' Steakhouse. The crazy thing is that 2 of the best steak houses I've ever been to (Since T & S Station in Shreveport LA closed down) are within 30 minutes of Pine Bluff Ar. Go figure. They are both amazing places.

Well, lunch wasnt very appitizing today. Leftovers... eaten in a hurry.


I had to attend a funeral of a relative. A very accomplished pastor of a large Baptist church who grew weary of this life. It was a sad day.

Orental Express number 21 Chicken, Beef and Shrimp in Hunan sauce. lots of vetties and only $6.45

A Subway foot long Spicy Italian sub for 5 bucks. Not the best, but certainly better than my Panda Express I had yesterday.

Thank God I live in a city where i can eat good chinese food and never have to go to a panda express... yuck!

I LOVE PF Chang's - Closest one is at the Mall of Georgia/Buford - 11 miles from me! YEA!
Ate at home for lunch today and made me a GREAT Boar's Head Oven Gold Turkey Sandwich, lots of mayo, a little mustard, tomatoes, Dill Pickles, pepper jack cheese and LOTS of turkey! YUM!

I love PF Changs too. but we rarely get there because we have a neighborhood chinese place that is just as high quality and just as good but less expensive..ergo...


Pan Acean is the name of the place. I think i love it so much because it is so badly spelled! LOL! Seriously it is good food....


At work, I have a dozen chinese resturants between me and the closest Panda...all worth going to. Panda just is not edible food to me.

Dallas is a great city for eating local chinese food. We also have quite a few Vietnamese places and I LOVE Pho!

I agree! Panda is kinda tough like Bear meat. The last time I ate Panda - I said never again and I never understood why those Chinese would give us their Panda's ...KNOWING how tough their meat was! They are so cute at the Zoo but I just don't want to eat any more of them!

Then they had this pepper stuff similar to what Pot Bellie has. so I was stoked!

Its a hike from you but worth the trip in my humble opinion.

Is that place in Garland, perhaps along Walnut? That's not too terribly bad; it would probably take me about 30 minutes to get there, depending on traffic and stoplights...

Let's see what the week after T-giving, or even the week after that, holds for us and go from there...

And since then, I've taken on add'l responsibilities at work. The last three weeks have been OT and then some for me since some people like to send urgent projects for me to complete as I'm "walking out the door."

Oh, well, we need to regroup sometime soon over lunch...

Ouch! And just how in the world are you functioning? 10 pots of coffee, extra bold? :)

Yeah, I know all about the projects with issues thing. Only after I've spent about 30 or 45 mins building the report and submit the update is when I start seeing the issues surface. That's the frustrating part, which requires going back to square one. Then emailing the project requestor (as politely as possible). Try that when they're knocking on your door saying "I need this done, like, last week." Ugh! Good thing, though, is in a few weeks I'll be passing these projects on to the people who are requesting them...which makes EVERY bit of sense. There's 4 of them, and only 1 of me.

I'll check with you here in a few weeks, hopefully much sooner...

we are just at the end of the cycle so ive been slammed for a month and have another week of that....

bad news is, my next cycle started last weekend. generally I have a week or two between the end of one and the start of the next. this time they bled together...

one or two weeks and I should be at even keel though.
