Do you have a really good Chicken Salad recipe for a sandwich, you would be willing to share?

I am looking for the best. :)

Delicious! Especially on croissants...

Fancy Chicken Salad

2 cups cooked chicken (approx 4 boneless/skinless chicken breasts)
1 cup diced celery
1 cup chopped apples
1 cup halved grapes (optional)
½ cup chopped FRESH basil (this gives it a wonderful flavor)
½ cup chopped nuts (walnuts or pecan are best, but slivered almonds work also)
Light Mayonnaise

Chicken Salad with Grapes
Serve this chicken salad as a sandwich spread or mound on lettuce for a luncheon dish.

Ingredients:
•1 to 1 1/2 cups diced chicken
•8 to 12 red or green seedless grapes, halved
•4 tablespoons mayonnaise
•1 rib celery, chopped
•1 green onion, with about 2 inches of green, chopped
•salt and pepper, to taste
•dash curry powder, or to taste, optional

Preparation:

Combine ingredients until blended. Spread on bread for sandwiches or arrange on lettuce leaves.
Serves 4.

Panera Chicken Salad

Ingredients
1 rotisserie chicken, about 2 ¼ pounds
¾ cup mayonnaise
¾ cup finely chopped celery
2 tablespoons dill pickle relish
1 tablespoon chopped fresh tarragon
½ teaspoon salt
¼ teaspoon ground black pepper
12 thin slices of Panera Bread Country loaf
6 leaves romaine lettuce, torn


Directions

1. Using your fingers, remove and discard the skin, bones, and excess fat from the chicken, placing the chicken meat in a large bowl. Tear or chop meat (you should have about 3 1/2 cups).



2. Add mayonnaise, celery, relish, tarragon, salt, and pepper to the bowl. Stir until thoroughly combined. Spoon onto the bread, adding a lettuce leaf to each sandwich.

Charlies Famous Chicken Salad with Grapes

Ingredients:

.2 1/2 cups diced cooked chicken
1 cup finely chopped celery
1 cup seedless grapes, halved

I love apples in my Tuna Salad as well. With onions it is hard to beat. ;)

chicken salad at all!

This is a good Chicken Salad recipe, as I LOVE cilantro and avocado. It doesn't feel heavy like other recipes. I'm also not a fan of fruit in my chicken salad, but will eat a Waldorf salad, because it also contains pecans. Yummy!

1 tablespoon extra virgin olive oil
2 boneless, skinless chicken thighs, cooked and chopped
salt and fresh black pepper
1 avocado, chopped
1 large tomato, seeded and chopped
1/2 bunch scallions, chopped
2 tablespoons cilantro, chopped
1 lime, squeeze juice over salad and mix all

Here is a recipe made for Queen Elizabeth II's coronation lunch in 1953, from Saveur magazine. I always check with Saveur when looking for anything special.

Coronation Chicken Salad

10 whole black peppercorns
2 ribs celery, roughly chopped
2 yellow onions (1 roughly chopped, 1 finely chopped)
1 4–1b. whole chicken
1 3″-piece ginger, peeled (2″ thinly sliced, 1″ finely chopped)
1 leek, roughly chopped
1 head garlic, halved crosswise, plus 2 cloves, finely chopped
1 star anise
½ lemon, thinly sliced
½ orange, thinly sliced
Kosher salt, to taste
3 tbsp. unsalted butter
1 tbsp. curry powder
¼ cup flour
¼ cup heavy cream
2 tbsp. currants
2 tbsp. finely chopped dried apricots
1¼ cups mayonnaise
½ cup Greek-style yogurt
¼cup mango chutney
1 tbsp. fresh lemon juice
Freshly ground black pepper, to taste
½ cup slivered toasted almonds

Place peppercorns, celery, roughly chopped onion, chicken, thinly sliced ginger, leek, halved garlic head, star anise, lemon, orange, and salt in a 6-qt. saucepan; add water, covering ingredients by 1″. Sonoma Chicken Salad Sandwich

Ingredients

3½ cups cooked, shredded chicken (about 2 lbs boneless skinless chicken breast halves)
1 cup diced celery (about 3 stalks)
⅔ cup chopped pecans
½ cup dried cranberries
2 Tbsp finely grated Parmesan cheese
Sliced bread, for serving

Dressing
⅔ cup mayonnaise
¼ cup apple juice
3 Tbsp honey
2 tsp apple cider vinegar
1 tsp prepared yellow mustard (optional)
1 Tbsp poppy seeds
½ tsp onion powder
Salt and freshly ground black pepper to taste


Directions

In a large mixing bowl toss together shredded chicken, celery, pecans, dried cranberries and Parmesan cheese, set aside. In a separate mixing bowl whisk together all ingredients listed for the dressing until well blended. Pour dressing mixture over chicken mixture and toss to evenly coat. Serve over sliced bread, croissants or rolls. Store in refrigerator.

Chicken Salad and Avocado Crostini
Ingredients:

6 oz Baguette, sliced into 24 half inch slices
Cooking Spray
3/4 cup mashed Avocado
1/2 tbsp Lemon Juice
Salt and Black Pepper to taste
1 large Tomato, diced

For the Chicken Salad

4 oz cooked, shredded Chicken Breast
1/4 cup Celery, diced
1/4 Grapes, diced
1 tbsp Red Onions, diced
1 tbsp Fresh Parsley, chopped
1 1/2 tbsp Mayo
1 1/2 tbsp Greek Yogurt (I used Chobani)
1 tsp Dijon Mustard
1/2 tbsp Fresh Lemon Juice
Salt and Black Pepper to taste


Preheat oven to 350 F. Place the 24 Baguette Slices on a large baking sheet. Spray both sides of the slices with cooking spray and sprinkle with a small amount of salt and pepper. Bake until golden brown and toasted, about 15-18 minutes. Remove from oven and let cool on the baking sheets.

Tequila Chicken Salad

1/3 cup fresh lime juice
1/4 cup fresh orange juice
1/4 cup tequila
2 teaspoons honey
1/2 teaspoon chipotle chili powder
1/2 jalapeno, seeded and minced
1/4 teaspoon garlic powder
4 boneless, skinless chicken breasts
salt and freshly ground pepper
10 cups Spring Mix salad greens
1 small can mandarin oranges, drained
1/2 small red onion, thinly sliced
1/2 avocado, diced
1/3 cup dried cranberries
1/4 cup toasted pepitas (or sunflower seeds)
1/4 cup chopped fresh cilantro
1/2 cup crumbled Cotija Mexican Cheese

Dressing

3 tablespoons fresh lime juice
2 tablespoons fresh orange juice
2 teaspoons sugar
3 tablespoons canola oil
salt and pepper

In a glass pie plate or shallow bowl, combine lime juice, orange juice, tequila, honey, chipotle chili powder, jalapeno, and garlic powder. Add chicken breasts and toss to coat. Refrigerate for 2 to 4 hours.
Heat a gas grill to medium high or use a grill pan over medium-high heat. Remove chicken from marinade, season with salt and pepper, and place on grill. Discard marinade. Grill 6 to 8 minutes per side or until cooked through. Let chicken rest 5 minutes and then slice against the grain.
To make dressing- whisk together lime juice, orange juice, sugar, and canola oil. Season to taste with salt and pepper.
In a large bowl, combine salad greens, mandarin oranges, onion, avocado, dried cranberries, pepitas, cilantro, and Cotija cheese. Add dressing to taste and toss well. Top with sliced chicken.

That is actually 6-star anise. A close relative of 1-star anise, but much stronger. ;)

I didn't know there was a difference. I do know it has a licorice taste to it. I usually use the powder form.

Interesting. Don't recall ever seeing that and I know I have never used it. I eat some Chinese and cook fried rice, but that is about it. :happydance

Lots of good recipes posted, but I especially would like to make the Coronation salad. It looks very elegant.

On a side note, I love pimento cheese and have a great recipe - Southern Living, of course. :thumbsup

Suppose to erase the bitter taste and make the tea clearer.

Po and others, have you ever put a pinch of baking soda in your tea?

Suppose to erase the bitter taste and make the tea clearer.

I've heard about doing it, but never have. It just seems weird. I don't think tea has a bitter taste, unless you cook it too long. For a gallon of tea, I bring to a boil two family size tea bags (Tetley - bags don't break) and 3/4 cup of sugar. Makes a great pitcher of tea. If I am having company, I will use 1 cup of sugar. Seems people like really sweet tea.

I have one particular medium saucepan that I use only for boiling tea. I usually fill that halfway. It stains the inside. Once in a while, when I get a wild hair, I clean it with Bar Keepers Friend. That's about once a quarter. :heeheehee

LOL! They do have a great salad. I throw away the croutons, but the best salad is never without sunflower seeds! Yummy.

This is so funny. We were eating out with my SIL's mother and grandmother. They just about had a fit that I dipped my fork in my salad dressing and then proceeded to eat my salad. The grandmother said, "Aren't you going to eat all of your salad dressing?" I wanted to say, "Would you like to take it home with you?" She took home my daughter's half eaten sandwich. :heeheehee

Ah. The green salads are very basic. I used to have a salad, well, it was more like 2 salads, a small order of waffle fries, and an Aaron Palmer almost every day for lunch.

Their salads always taste fresh and the grilled chicken is great when you are on the run. You can have the waffle fries. Not a big fan of french fries.

A few months ago, I went inside to pick up an order and somehow, I dropped my purse - with credit cards, cell phone, cash, etc. On my way home, I suddenly realized I didn't have my purse. My DIL called ahead as we turned around to see if we could locate it. The Manager said that someone spotted it in the parking lot and brought it inside - everything intact. Thank you, Jesus! I still don't know how I dropped my purse without realizing it. Must have spent way to much time shopping that day. :heeheehee

Esther, I think you have to serve a traditional recipe for a crowd, but I think this recipe would be great with Hummus. I like making it myself and cook my own chickpeas, preferring that to buying them canned.

Hummus Chicken Salad

1/2 cup Sabra Hummus (or your favorite hummus)
2 tablespoons finely diced celery
1 tablespoon finely chopped green onion
1 tablespoon finely chopped red bell pepper
1/4 teaspoon salt
freshly ground pepper
1 cup cubed grilled chicken breast (or any leftover chicken)
1 tablespoon water (I omitted this, instead used lemon juice)
Bread or salad greens, for serving

In a large bowl, stir hummus, celery, green onions, bell pepper, salt and a sprinkling of pepper.

Add chicken and water (or lemon) and stir until mixed thoroughly.

Serve with bread or over your favorite salad greens.

This sounds really yummy!

I made a chicken salad today, and wished I had the recipes here in front of me when I was making it... but my chicken salad turned out pretty awesome, without a recipe!

Here is what it consisted of...
1 cup diced chicken
2 heaping tablespoons mayo with olive oil
1 Tbsp chopped banana peppers
1 celery rib, diced
1/4 cup dried cranberries
1/4 cup pecans, chopped
1 tsp smoked paprika
1/2 tsp cayenne pepper
dash of salt & pepper

Can you tell I love a little spice in my life ;)

It was really a yummy sandwich. I used Dave's Killer Bread that we got at Costco this weekend. That bread is amazing! Anyone else tried it?

Anyway, that is my take on chicken salad. Next time I think I will add some grapes or apples, but I didn't have any in my refrigerator, so I used dried cranberries instead....

Here is what it consisted of...
1 cup diced chicken
2 heaping tablespoons mayo with olive oil
1 Tbsp chopped banana peppers
1 celery rib, diced
1/4 cup dried cranberries
1/4 cup pecans, chopped
1 tsp smoked paprika
1/2 tsp cayenne pepper
dash of salt & pepper

It was really a yummy sandwich. I used Dave's Killer Bread that we got at Costco this weekend. That bread is amazing! Anyone else tried it?

Anyway, that is my take on chicken salad. Next time I think I will add some grapes or apples, but I didn't have any in my refrigerator, so I used dried cranberries instead....
