We arrived to Wilmington,NC on Wednesday night. Danah, Aaron and I are visiting Mom, my sister, Darcie, and her family.

Mom lives just down the street from my sister. I'm so glad Mom is comfy and well-situated.

Did I mention I'm eating Mom's home cooking???!!! Hallelujah.

In the last couple of days I've pigged out on rice, steak, pork chops and tostones ... fried green plantains. I'm in HEAVEN.

My two brothers and their families will be driving down next week. I can't wait .... it's been almost 2 years since my kids have gotten to see all of 'em.

I've gone camera happy.... so in the next few days I'll be posting some.

Hard to explain ... it's one of those things you have to experience ... with some rice and beans.

Tostones are fried green plantains ... they are best served w/ salt ... and some folks add aji, a sauce ...

Those of us from the Caribbean also eat the ripe, or yellow, plantain which is sweet ... We call them plantanos maduros.

There's also mofongo ... another dish made w/ plantains.

Mofongo - Mofongo is a popular Afro-Boricua [Puerto Rican] dish, made from fried green plantains seasoned with garlic, olive oil and pork cracklings, then mashed. Mofongo is usually served with a fried meat and a fish broth soup.

Niagara Falls was amazing....nice to see God's fingerprints over the waters....vacation with the fam was great...sad to see vacation end....back to work...:IAM

We had the privilege of bringing the Word to the Pentecostales de Wilmington.

This is the congregation my brother in-law, JC Marti, is pastoring.

We had a good time and enjoyed a sweet move of God.

I remember our spanish church....all the kids would wait off of the side of the platform to get their turn to play at altar call...he he! Down the road at my cuz's church, he was one of them kids and is now the drummer at CLC...it pays off!!

We are praying and waiting for a drummer, right now we use the midi on the keyboard. Like I said we just got the set. We need to change the skins and get some cymbals. We got the set and by faith we'll get the drummer soon enough

Poor DA, has to visit mom in order to eat good food. I just had lechon asao with guineos, arroz con gandules and alcapurria for FIVE BUCKS a plate, just yesterday. Oh, and a plate of budin for desert. (Goat stew w/rice for $5 on thursdays) Same menu every weekend. Just down the street from where I live.:slaphappy

I found a mexican dude in the Wal-Mart and he couldn't even help me out, now that is a shame!!! The Ferrari dealership is across from my hotel...me thinks that is why they ain't no canned jalapenos around here!!

The Puerto Rican alcapurria is like the Mexican empanada.

We also make PASTELES. They are somewhat similar to tamales except instead of using corn meal we use ... guess what? Plantains!!!!

Pasteles are not a sweet pastry or cake, but a soft dough-like mass wrapped in a banana / plantain leaf and boiled. Puerto Rican pasteles are similar in shape, size, and cooking technique to Mexican tamales. Tostones are fried green plantains ... they are best served w/ salt ... and some folks add aji, a sauce ...

Those of us from the Caribbean also eat the ripe, or yellow, plantain which is sweet ... We call them plantanos maduros.

Eddie loves these; they ate them in Africa all the time! He always orders them at Bahama Breeze, because it's the only place around here to get them. He does not like the green ones.
