I just made myself a delicious (and healthy) lunch!

Cubed chicken breast
Fresh bing cherries
Fresh blueberries
1 oz. goat cheese
water crackers
Glass of water

Yummy, satisfying and guilt-free!!!!

What are ya'll eating for lunch? :gaga

Lunch is in the past... I had a Tuna sandwich.
It's no cubed chicken breast but it did the job!

I should be thinking about supper right now. Any suggestions?!

Going to be quick and easy here. Salad, Baked Salmon, Tea, maybe a creamed spinach frozen side I have in the freezer, or some sauteed veggies. I bought a watermelon to cut up for dessert.

Summertime is my favorite time to cook--so many fresh fruits and vegetables to choose from!

Speaking of which...I heard on the news yesterday that there's a problem with salmonella on the tomatoes (Roma?), and they haven't pinpointed the source yet--so maybe my salad will be sans tomatoes.

That would sound good--if I were still hungry.

We have a [fairly] good Thai restaurant here...they have a dessert (I can't remember the exact name), made of sweet rice, custard, and coconut milk--I've been craving that for a couple of weeks.

Well...at least you're eating low-cal. :)

I cannot do diet food. (And it shows!) LOL!

My only hope is to choose healthy portions and factions of the foods I already love and try to leave off the real butter and heavy whipping cream. :reaction

Well, if you happen to be in CA, don't buy any cheese from a Mexican street vendor. (as if) In the news here yesterday, there is a rare strain of TB in some of this cheese, they are saying it is being sneaked over the border!

All of this food stuff makes me want to buy a cow, have a fish pond, and garden year round.

I've always been a little worried about the cleanliness aspect

No and yes.

Am up by 6:30 most mornings, and I'm in the PST zone.

I just don't eat breakfast till later...usually it ends up being more brunch than anything. :wacko

UM, no. We have these guys who set up these little stands anywhere they can, and they sell cut up fruit in plastic containers, and then they pour something over it, I cannot imagine how many hands that fruit has gone through and I'm sure that it hasn't been washed.

I'm sorry, but I only eat at places that I know the health inspector visits on a regular basis, and even then, stuff manages to slip through. But these guys on the street corners, they are slipping in stuff over the border, and there is no telling what it has come in contact with. YUCK!

I am glad you said something about it! You know TB was virtually wiped out here in the US, but somehow in that few years its been resurfacing due to things like this.

Anyway how does this sound?

Tostada de Poulet

Seared Chicken Breast dusted with Cajun spices
accompanied by a south of the border salad
with black beans
and feta cheese in a roasted tomato,
cumin flavored mayo

I know! I watched a documentary on it a while back, it is really terrifying.

I was actually getting ready to write a whole lot more on this topic, and then I realized that this is a food thread, people probably aren't appreciating me very much right now!! SORRY!! :blah

Or
Paillard de Poulet

Pounded chicken breast, pan-seared, and flavored with basil
and pine nut pesto
served over house salad
tossed with tarragon vinaigrette

Interesting topic though-

I don't like all potato salads either...I've always made it like my mom does.

No onions or celery, but with pickles and olives instead. :D

I like all that stuff yummy! (except for boiled eggs, dont care for those in it)

Ok I have a serious question to ask you-do you use Best Foods Mayonnaise

or Miracle Whip?

I think that makes a big difference in a good salad or not.

I make it all the time in the summer it seems. My favorite way to make it is with diced red skinned potatoes, celery, onions, and a lot of eggs.

The dressing: Miracle Whip, Ranch dressing, sour cream, a drop of vinegar, and a dash of sugar.

Mix in the dressing and add sweet relish. Top with sliced eggs and paprika...:bliss
