Right now I am cooking cornbread for tomorrow's dressing. Then time to stick another pie in the oven.

First time in years that we are not traveling or hosting. Kristin might have handled it, but her ankles swell after a few hours. Baby is coming soon.

We plan to eat out. I don't think we have ever done that before. Less stress around here - and that's all good.

We have reservations for 12:30 PM at http://www.countryclubhotel.com/lake...-mo-dining.php They are having a Thanksgiving buffet with live music.

I really wanted to cook, and ensured Kristin I would "do it all".... she is too smart for that I guess. :ursofunny

Made the dressing for tomorrow and Harvest Salad and baked this cake!

Chocolate Velvet Cake

1 1/2 cups semisweet chocolate morsels
1/2 cup butter, softened
1 (16 oz) package light brown sugar
3 large eggs
2 cups all-purpose flour
1 t. baking soda
1/2 t. salt
1 (8 oz) container sour cream
1 cup hot water
2 t. vanilla extract

Melt semisweet chocolate morsels in a microwave-safe bowl for 30 - 60 seconds. Stir until smooth.

Beat butter and brown sugar at medium speed, beating about five minutes or until well blended. Add eggs, one at a time, beating until blended after each addition. Add melted chocolate, beating just until blended.

Sift together flour, baking soda, and salt. Gradually add to chocolate mixture alternately with sour cream, beginning and ending with flour mixutre. Beat at low speed just until blended after each addition. Gradually add 1 cup hot water in a slow, steady stream, beating at low speed just until blended. Stir in vanilla.

Spoon batter evenly into 3 greased and floured 9-inch round cake pans. Bake at 350 degrees for 25 to 30 minutes. Cool in pans on a wire rack for 10 minutes, then remove layers from pans, and let cool completely on wire rack.

Coconut-Pecan Frosting

1 (12 oz.) can evaporated milk
1 1/2 cups sugar
3/4 cup butter
6 egg yolks
1 1/2 t. vanilla
2 cups chopped pecans
1 1/2 cups sweetened flaked coconut

Stir together first four ingredients in a heavy 3-qt. saucepan over med heat; bring to a boil and cook, stirring constantly, 12 minute. Remove from heat; add remaining ingredients, and stir until frosting is cool and of spreading consistency.

Going to go to someone's house for dinner.

I don't really know them. They go to the same church I do. And apparently there will be a lot of people there I don't really know. "Oh, there'll only be 17 or 18 of us there...so just bring as many rolls as you think we should have for that many."

Only. Introvert me goes...ACK.

But it should be good. :) I get the whole day to prepare myself and get in the right frame of mind!

Cornbread's out. LAST pie for the homeless shelter just went in the oven. Next year, I will not wait until the day before Thanksgiving to make pies. Good grief, I must be crazy.

About 30 people coming to our house. The turkey is in the fridge all prepared. Just gotta pop that bird in the oven at 10 a.m. tomorrow. Baked 4 pumpkin and 4 pecan pies and made puppy chow already. I'll make sweet potatoes, regular potatoes and homemade oatmeal dinner rolls tomorrow morning.

After we eat, we'll all load up and go to the bowling alley to work off some of that food so we can come back for round #2.

And as if that's not enough - I got a call today from my boss as the funeral home. He delivered photos at 6:00 tonight and I have to have a DVD finished by Saturday morning for someone. I'm almost done now. Just have to burn it to the DVD, then burn the Lightscribe on the top and make the cover for the case. That's not too bad. I'll finish in time. WHEW!

Small gathering tomorrow. 2 smoked turkeys, a ham, dressing, and pies all prepared. Only have to make mashed potatoes, and new potatoes tomorrow. Pea salad and cole slaw in the fridge. Oh and deviled eggs and fresh rolls will be made in the morning also. Our real Thanksgiving/Christmas with all the kids, grandkids, and other relatives on the 19th of next month.

For the second time in the 13 years we've owned our current home (AND that I can even remember) ...I am actually cooking our Holiday meal.

We always end up at parent's homes. Usually both. A couple years we had 3 dinners to attend. :wacko

But this year we have dinner with in-laws on Saturday, and my folks were invited to my sister's...so it's just us...which worked out really well, cuz I'm SICK right now! UUUGGGHHH!!!

I'm so excited to be able to have some leftovers! :woot

And I am a traditional meat & potatoes gal, so dinner will be simple! :thumbsup

Turkey
Mashed Potatoes
Candied Yams
Green Beans
Cranberry Sauce
Rolls
Pumpkin & Apple Pies (THANK YOU Costco!!!)

Only 3 of us, so we'll go out.
And my son works until 3pm.

I did bake 2 pies yesterday. And made cranberry sauce just as a side dish since this is the only time you can buy fresh cranberries.

And I'm dealing with a cold............

Happy Thanksgiving to one and all. :highfive

Spending Thanksgiving at the Opryland Hotel in Nashville for ALJC Youth Convention. No cooking for me! We're going to head over to TGI Fridays for something to eat later, maybe.... or maybe not. Haven't really decided yet.

I had no idea that anyone from AFF would be here, but I was honored to be able to meet Mr. Steinway and his wife last night outside of the conference room where the service was being held. I enjoyed getting to talk with them for a few minutes before they were swept away by one of the many people here who knew him. :D

Happy Thanksgiving everyone!!
