Recipes for a Ladies Tea. Help??
 
We are having our annual Ladies' Tea this coming Friday night. I have to make 5-6 dozen tea sandwiches, as well as anything else I can think of that would fit in.

Sooooo.......... anybody have any highly recommended recipes? I would ask for the recipes for oarderves but I don't know how to spell it. LOL Tea Sandwich recipes would be great!! Small finger foods. Whatever you have! Help quick tho, please!!

You know, just my experience, but it seems when I keep things simple, people enjoy it more. So, for sandwiches I just do the traditional chicken salad, tuna salad and ham salad. Sometimes I might throw in pimento cheese, cucumber and egg salad.

I always cut the crust off, which I am sure you already do. It makes everything look so much more elegant.

Also, and you probably already do this as well, put the green leaf lettuce leaves on the platters and then place the sandwiches.

Make sure if you use crackers, they don't compete with any dip you might serve.

AND serve that awesome punch you listed. I have used it, at least, six times since! :thumbsup

Found this in my December Food & Wine magazine. I haven't tried them, but it looks like a great holiday recipe.

Chocolate-Espresso Snowballs

Active: 30 min. Total: 2 hr
Makes about 3 dozen cookies

2 sticks unsalted butter, softened (plus more for greasing)
1/2 cup sugar
2 t. pure vanilla extract
1 3/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
2 t. instant espresso powder
1/2 t. salt
2 cups finely chopped pecans (I like to toast any nuts I use in cookies)
Confectioners' sugar, for coating

1. In large bowl, mix the butter, sugar and vanilla until smooth. Stir in the flour, cocoa, espresso power and salt until thoroughly blended. Stir in the pecans. Cover the dough and refrigerate for 1 hour.

2. Preheat the over to 324. Lightly butter 2 cookie sheets. Working in batches, roll the dough into tablespoon-size balls and place about 2 inches apart on the prepared cookie sheets. Bake in the upper and lower thirds of the oven for 15 minutes, until the tops are dry and the cookies are slightly firm to the touch. Let the cookies cool on the sheets for 10 minutes, then transfer to a rack to cool completely, roll in confectioners' sugar to coat.

Oh yeah. That's me! I can stir fry, make grilled cheese sandwiches, hamburgers, and heat up soup. That's about the extent of my culinary repertoire.

I made this a couple of weeks ago - totally awesome!!! I think it would be perfect for a ladies tea and especially perfect for Christmas. Got that recipe from my December, Southern Lady magazine.

Sour Cream PoundCake with Lemon Glaze

1 cup (2 sticks) butter
3 cups sugar
6 large eggs
3 cups all-purpose flour
Pinch salt
1/3 t. baking soda
1 cup sour cream
2 t. lemon extract
1/2 t. vanilla extract

Lemon Glaze:
1 cup powdered sugar
2 T. fresh squeezed lemon juice
2 t. lemon zest

1. Preheat the over to 325. Grease and flour a 10-inch tub pan.
2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, and beat at low speed with a mixer for 1 minute, stopping to scrape the sides of the bowl. Increase the speed to medium, and beat for 2 minutes.
3. In a separate bowl, mix the flour, salt, and baking soda.
4. In another bowl, mix the sour cream and extracts. Alternately add the flour and the sour cream mixtures to the batter until both are fully incorporated.
5. Pour the batter into the prepared pan, and bake for 1 1/2 hours, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan on a wire rack for 10 minutes before transferring the cake to the rack to cool completely.
6. To make the glaze, combine the powered sugar, lemon juice, and zest in a bowl, and beat until smooth. While the cake is still warm, poke holes into the surface with a skewer and drizzle the lemon glaze over the cake.

Also from Southern Lady. I think these would go perfect on a tiered tray with the Espresso snowballs.

Pecan Butter Cookies

1 cup melted butter, softened
1/3 cup honey
2 1/2 cups all-purpose flour
1 1/2 cups finely chopped pecans
1/2 t. salt
Confectioners' sugar for coating

1. In large bowl, beat butter and honey at medium speed with electric mixer until creamy.
2. In a medium bowl, combine flour, pecans, and salt. Gradually add flour mixture to butter mixture. Cover, and refrigerate for 30 minutes.
3. Preheat over to 300. Line baking sheets with parchment paper.
4. Roll dough into 1-inch balls. Place 1 inch apart on prepared baking sheets. Bake for 30 minutes or until set but not browned. Let cool for 5 minutes.
5. Roll cookies in confectioners' sugar. Let cool completely. Roll in confectioners' sugar a second time.

CREAM CHEESE PECAN TARTS
TARTS CRUST:


1 c. flour
1 stick butter
1 (3 oz.) cream cheese

Mix butter and cream cheese, gradually add flour. Roll into balls and chill for 1 hour. Press into miniature cups.

FILLING:

1 egg, beaten
3/4 c. brown sugar
1 tbsp. vanilla
1 c. chopped pecans

Mix together egg, sugar and vanilla. Stir in pecans. Place in cream cheese tarts. Bake at 350 degrees for 25 minutes.

CREAM CHEESE SPRITZ COOKIES

1 cup (2 sticks) butter, softened
3 oz. pkg. cream cheese, softened
1-1/4 cups sugar
1 egg yolk
1 tsp. pure vanilla extract
1 tsp. pure almond extract
1/2 tsp. butter flavoring (optional)
1 tbsp. butterscotch schnapps
2-1/2 cups flour
1/2 tsp. salt

Preheat oven to 350°F. Cream together butter and cream cheese; add sugar.

Cream mixture until light and fluffy.

Add egg yolk, beat well; stir in flavorings.

On low speed, gradually add flour and salt.

Cookie dough will be soft and somewhat sticky; adjust consistency if dough seems too sticky, adding a tablespoon of flour at a time; if dough seems too stiff for a cookie press, add a tablespoon of milk at a time.

Shape dough into 3-inch balls and drop into the barrel of a cookie press. Push dough in to eliminate spaces. Press cookies onto an ungreased cookie sheet.

Sprinkle with colored sugars or color dough with a few drops of red or green food coloring to make festively colored cookies.

Bake for 8-10 minutes or until lightly browned.

Store in airtight container. Freeze if keeping for more than 2 weeks.

Makes about 4 dozen cookies.

Wow, leave it to Martha Stewart to overcomplicate things!!!!!

Two slices of a hearty whole grain bread, some real butter, melted so you can brush it on the bread, and some good old Velveeta cheese! I realize it's not real cheese, but it melts and tastes so good!

Feta Stuffed Peppers

20 jalapeno pepper
1 (8-ounce) package cream cheese, softened
1/2 cup crumbled feta cheese
1/4 cup roasted red peppers, finely chopped

Cut jalapeno peppers in half lengthwise. Remove and discard seeds and membranes. Set aside. (Wear gloves when handling peppers).
Preheat over to 400.
In medium bowl, combine cheeses. Add roasted red peppers; stir well.
Spoon mixture evenly into pepper halves. Place on greased baking sheet.
Bake 20 minutes, or until peppers are tender.

You could wrap a slice of bacon around each, if you wanted to - optional.

No, Michael - not Velvetta! Extra Sharp Cheddar Cheese! After the sandwich is made, place under a lid to help the cheese melt a little more. :thumbsup

I may have to try that. But, it's going to be hard to break away from Velveeta, that's what my mother made them with!

easy, healthy, organic, but awesome

cover the bottom of a small square glass dish with pecans
cover the pecans with an inch of organic greek vanilla yogurt
next comes a layer of frozen dark sweet pitted cherries
then comes a bar of good, dark organic chocolate broken into bits and sprinkled on top

refrigerate until time to serve it.

That sounds really good. I'll have to send that to one of my sisters. I could go for it, except, I only like fresh cherries. I could totally do the frozen strawberries or blueberries- yummy! I use Cascadian Farm products.

You will love it! I think it would be good without the glaze, but it looks absolutely beautiful with it! The bundt pan really turns out a nice looking cake!

Michael's already dropped one thing at my house, Pressing ON. It was a long, long time ago and is a very long story :) But let's just say - I think I'll pass on his grilled cheese, thanks. Now, if his sweet mama was still here to make the grilled cheese, I would leave the lights on for her! Not for the grilled cheese (altho I'm sure it was great because she was a really good cook!), but just because I would enjoy visiting with her. On the other hand, I'd enjoy visiting with Mike again too. So he can come over, but I'll still pass on the grilled cheese. :heeheehee

maybe "dropped" is the wrong word, Mike. How about "placed" - as in "placed the tv on the floor". Bringing back any memories now? (I wouldn't be surprised if the answer is still no.)

Found this in my 2009 Christmas with Southern Living. A cheese log with Gingersnaps? - heavenly. Going to try this one for a Christmas party.

Apricot-and-Strawberry Chevre

1/2 cup dried strawberries, chopped
1/2 cup dried apricots, chopped
4 oz chevre (goat cheese)
1 (3-oz.) package cream cheese, softened
2 Tbsp. finely chopped red onion
2 Tbsp. apple cider vinegar
1 1/2 tsp. chopped fresh rosemary
1/8 tsp. freshly ground pepper
Gingersnaps

Bring strawberries, apricots, and water to cover to a boil in a small saucepan. Remove from heat; cover and let stand 5 minutes. Drain and let cool completely.

Process goat cheese and next 5 ingredients in a food processor until combined. Stir in chopped fruit by hand.

Shape cheese mixture into a 12" log; cut log into 3 (4") logs. Wrap each log in plastic wrap, and chill at least 2 hours. Serve with gingersnaps. Store cheese logs in refrigerator up to 1 week. Yield 3 (4") logs.
