Truffles - I want to try them!

Has anyone tried these? I am really wanting to get some... $400 to $800 a lbs?!!? Gotta be a way to get some cheaper!

A truffle is the fruiting body of an underground mushroom; spore dispersal is accomplished through fungivores, animals that eat fungi. Almost all truffles are ectomycorrhizal and are therefore usually found in close association with trees.

naw just try the chocolate ones.

Re: Truffles - I want to try them!

I have already eaten the chocolate ones... Lol!

I have spent several hrs studying the fungi and watching hogs and dogs hunt them. I am fascinated!

Re: Truffles - I want to try them!

Get you a hog, or find a farmer that hunts them. Probably cheaper that way. :D

Yo Ferdmiester!! As our resident AFF chefster. want your opinion on the Truffels, please!

Ferd 03-26-2012 11:34 AM

Re: Truffles - I want to try them!

yes they are awesome! you can get some idea of the flavor by buying Truffel flavored olive oil. much less expensive.

interestingly enough, Truffels have traditionally only been found in northern Italy and France (and some surrounding regions)

however they are now being cultivated in different places. I actually checked into this last year. What I found was that my land is too far south for growing Truffels. However if you have land in Arkansa or Missouri or some areas around that zone, you might be able to buy trees that have been innoculated.

Here is a link to a company (If memeory serves this is the group connected to the University of Oregon.

Also, there is an indigenous North American truffle called the Pecan Truffle. It is native to America and found near Pecan trees… hence the name…

It grows in the south so if you have land in the south, and you are interested that might be an option. The market for these has not really developed yet but I think in the next 10 years, it very well might take off as the “Eat Local” movement takes off and this is a new potential gourmet food item. I really think southern chef’s will go nuts for this if they become available with some consistency.

Thank you Ferd!! I have learned the University of Missouri is in a pilot Truffle project about an hour away from my house. Seems there has been some limited success in creating the right conditions and "plugging" the soil.

I can't wait. I am looking for a source to try these babies!

If I lived where you lived, and had some land, I would be planting innoculated trees!

...back when I was backslid and had a whole bunch more money, and was able to go to the types of restaurants that use these, I had a risotto that had them in it and it was amazing... Absolutely wonderful....

I do not see what is so appealing in truffles. Part of it might be an aversion to foreign food. American for me always.

Re: Truffles - I want to try them!

Do you like mushrooms? That's what made me try them... and a matter of how often could I try a risotto that was more expensive than I would normally pay for 2 or 3 entire meals. So I tried it, and the taste, was AMAZING!!!!! Believe me, it's not like caviare (sp?), where I think that's more of people saying it's so great but the taste needs to be acquired. I hated it... but truffles, this ole hillbilly loved them. They were really great.

OK I already have a 30 tree mature pecan orchard and I'm a Local Harvest farmer. Now I must find out about growing truffles on my trees. Wow thanks! :)

No shrooms for me either. I prefer garlic and other spices.

T2W, you MAY already have truffles.

if you have pecan trees, and live in the south there is a pretty good chance you have Pecan Truffels.

the University of Georgia is doing some work on that. They might direct you on how to get an animal that can find them.

Truffles are described by some as having a garlicky, buttery, honey taste.

Truffles - The allure of truffles - It's all about the smell!

Did You Know?

You smell them and you become willing to do whatever you have to do to have them.

Truffles are the culinary equivalent of sex. You love them or you don’t. You smell them or you don’t. You need them or you don’t.

That most women describe the aroma of fresh truffles and truffle oil as earthy and very sensual? That most men just laugh and give you a funny look when you tell them what women think of truffles and truffle oil? Remember that I said most men and not all!

I am going to contact the university in the morning and see what I can see. That would be beyond cool. I estimate the trees to be 40 years old... I hope, I hope, I hope for truffles! :)

Indeed. I would be tempted to play a violent video game to purge my system of all of the sugar that now possesses my system after reading the last few posts.

The most expensive secret ingredient ever featured on Iron Chef America was truffles, and both the Iron Chef (who I believe was Jose Garces for this round) and his challenger did a very poor job. In fact, I think Chef Garces lost the battle.

Ok, apparently this is a bad time of year to try to buy fresh truffles, I guess they are summer? You would think the S hemisphere would just export, hmm...anyway, my sis says she buys from several sources, and that Amazon or Ebay are good sources, but in season only for freshies. Look for $40 a pound about July.

Well no, unless I REALLY liked them! A few ounces of fresh ones cost about $80. I can get a half oz black truffles in a brine jar for 15$. Maybe thats where I should start. I just thought fresh ones would be a better introduction.
