Low Carb Diet Anyone?
 
just read a book by dr. bernstein about how diabetics should eat a low or no carb diet. I've slowly been adjusting my diet. omelets in the morning, sugar free jello for snack and chili with a side of chicken breast or skirt steak with greens for dinner. pizza once a week. no rice, bread, potatoes, pasta, crackers, chips or sugar free cookies. my sugar is low to the point of not needing insulin and i've lost a few pounds already.

was wondering if anyone else is on a low carb diet and what other types of meals could be added to the diet.

I've been keeping my calorie intake at 1600 or less, and my trainer said that was good, but that I also needed to watch the fat, sugar and sodium intake. I ignored her. :D

I watch my calories, limit sugar and try to make the fats healthy--beyond that, I don't worry about it. I think I'm more along the lines of "eating clean." I skip the fried, sugary, refined, processed and junk foods, and I've been working out with a trainer 3x a week. I've dropped about 12 lbs. since August 1st. I can't handle a low-carb diet. I try to make sure I eat healthy carbs instead. However, since carbs are generally high in calories, limiting calories means having smaller portions of carbs. I suppose it works out in the end....

I've had multiple people in my family go on the low-carb diet and lose weight really fast, but they all seem to gain it back eventually. I'm trying not to take any shortcuts. I just want to be healthier and more energetic! (And fit into a size 6 again!!!!! :D)

While I do fine during the day...I eat healthy for the most part, no fast food or candy bars or sodas etc, BUT the giant in my battle is ice cream just before bedtime!! I can't say no if it's in the fridge! I eat from the round container, from the center out, and work my way to the outside. Sheer addiction. Thankfully, I am physically active in my work each day so that keeps me from swelling up great big. I've done the low carb, but low energy came with it, so for me, it's good carbs instead of bad carbs mostly. Whole grains and wheat etc...

All except for ice cream, I just can't fudge there...or can I :D

You know, I've done really well staying away from sodas for years. Then one day I decided I wanted one. Then I wanted another. Then another...and now I just realized that I have gotten out of control of the sodas. Today, I drank water instead of soda.

I am going to have to eat air or go on that fast. :D

I'm low carb. Been following it for years now. Used to weigh 260 but now I fluctuate close to 175. Have kept the weight off for like 7 years now.

I lost over 40 lbs going low carb. Now, I intake carbs in proportion to my exercise level to fuel my workouts (I'm a runner). :)

Dedicated, Try a mashed cauliflower with lots of real butter for a low Carb substitute to mashed potatoes. Very Yummy.

Also, stewed spinach with garlic, asparagus, broccoli and chicken Cordon Blue without the breading.

Kind of a Paleo diet thing here... Have you read Wheat Belly? Great low carb info there.

I like the cauliflower mashed potatoes and cauliflower crust pizza. For sweets I make macaroons with very stiff meringue fresh coconut, and stevia, dropped onto a cookie sheet and baked.... Or cheese cake with fresh cream cheese, eggs, stevia, vanilla, lemon juice and a crust made of almond flour. butter and stevia. I use stevia and xylitol mostly but occasional agave nectar. Can you tell I love dessert?

We also use Quinoa in place of other hot breakfast cereals, rice, pasta. etc. when we just have to have those things, although time without them has led to less and less of them. Look in the gluten free section of your market (if you have one) for pasta alternatives.

One big help for me has been my Nutra-Bullet blender... I can get 5 or 6 servings of veggies in to me in 5 minutes... and drink veggies for breakfast on my way to work without all the mess and clean up of juicing.

can't you have all the meat you want on a low carb diet. My niece did this and lost weight really fast, she added sausage or bacon to her eggs. Also cheese is acceptable. There's no reason to go hungry on this diet, I just feel like I have to have something sweet with my black coffee, and I don't like sugar substitutes. :icecream

I did the Atkins thing over 10 years ago, I lost weight, but also my hair started falling out. I don't diet anymore...I eat normal food, just watch how much I eat, I won't use sugar sub...too much info on how bad they are...I just limit my sugar intake to a point. Just be careful about low anything...what they take out they replace with something else. I try to not eat chemicals.

I feel that our bodies does need some of all foods. The adkins diet may be good for a quick weight loss, but I wouldn't advise anyone to stay on a diet of mainly protein. My step Mom ate hamburgers, she just took off the bun and ate the veggies and pattie. Of course French fries are a no no. Water is much better than an artificially flavored cola.

I drink from most of the major food groups: Water, Gatorade, Coke, and various adult beverages. The only liquid(s) I do NOT consume at all are milk and coffee.

If you don't drink coffee Randy Wayne, you just don't know what you're missing. Why not try limiting those Adult Beverages for a good hot cup of Maxwell House coffee?

Haven't read Wheat Belly. Sounds interesting! I for one have been very interested recently in eating more healthy food. The overwhelming evidence is out for all to see that we need more of the nutrition found in plants than we are getting out of all the chemically altered foods out there. We have gone to eating strictly whole wheat, if we eat wheat at all. No high fructose corn syrup (that's a hard one, as it is in everything, even bread, peanut butter, and just above anything you get at a fast food restaurant!) ... I have incorporated spinach and kale into our diet at least 6-7 times a week, adding it to soups, stews, pastas etc. I have quit buying any prepackaged food items, and make as much as possible from scratch. We eat venison now exclusively, and only chicken without hormones. Adding more beans also to our diet, trying to add white beans to soups, stews etc., and black beans to Mexican food etc. I believe our family has been much, much healthier since I began all these changes. Oh, and soda is on the black list. Even my kids, when eating out ask for water! They are teenagers, and that is encouraging to me, that they are seeing the health benefits of all these things.

Sugar substitutes are chemically altered, and upset the chemistry of our bodies, even though they seem to pass through the body untouched. It is best to limit all sugar substitutes as much as possible, using either honey, succanat, turbinado sugar or maple syrup, sparingly. We use succant and turbinado sugar now in place of brown sugar, and honey when a sweetener is needed.

The Atkins diet is very dangerous. Our body needs all the food groups, but a heavy emphasis on plant based foods is really where we get the most nutrients our bodies need. Check out this article that just came out today about red meat:

Lets have a RAH RAH for the Coffee and Bible Team. I guess my coffee is my worse vice.

Talk to a cigarette smoker, and they condemn you for having the coffee habit, but I'm not as addicted to caffeine, as most who smoke are addicted to nicotine, nor do I drink cola's on a regular basis.

Really? Like people really sit around and compare vices and condem each other? Wow... everybody I know is too worried about all the ways they are failing at giving up bad habits, losing wieght, getting more fit, being better parents, making income stretch to meet bills, etc. to spend any time at all worrying about who is making more or worse mistakes than them... Guess I really am blessed! :)

Plant based is great, have you tried the Nurti-bullet? I can put two carrots and ton of spinich and kale, a celery stick, some blueberries and almonds... or whatever... whirl... and drink in 2 minutes. Talk about increasing your produce consumption without having to eat till you pop. :)

I like stevia, it's made from a plant leaf. I use succanat when I bake but it's still sugar and not conducive to 'low-carb'... great for nutrient dense eating which is where low-carbers should land once they've achieved weight loss and sounds like what you are doing... perfect for those growing teens!

Dr. Adkins didn't have it all wrong... but he seriously screwed up some things. All the nitrates in bacon and lunch meat- bad, all the artificial sweetners- bad, limiting green veggies- bad!. The having meat thing... not so bad. Meat and eggs tend to be self limiting. Nobody just gorges on them. Fats have a very high saity rate... you feel full because you are full... If one does not eat commercial beef, pork, chicken but instead buys (or raises) natural pasture fed animals then IMO, beef can be just as good a venison health wise and gives a little variety. Personally if I had to eat commercially raised meat I'd be vegan for health and ethical reasons... Fortunately it has not come to that and I am still enjoying a good steak a couple times a week and some nice ribs on weekends. :happydance

Things I avoid- REALLY avoid- as in never eat... GMO corn, soy, or anything raised on GMOs. Artificial anything... flavors, colors, sugars, additives, preseritives- NO CHEMS... Anything that comes in a shiney package... so chips, dips, sodas, cookies... you name it... if it's in the center asiles of the store I never even see it becasue I don't walk up them except to buy tea, coffee, spices, canned veggies and dried beans.

Bread... sprouted grains only. Beans- soaked in whey or vinegar/water overnight before cooking.

Ever read Sally Fallon's Nourishing Traditions? Great book.

You truly are blessed Titus 2 Woman. But this truly does happen in my neck of the woods. And it does sound foolish.

I've been hearing a lot about these juicers. May need to invest in one. Do these shakes actually taste good?

Yes, I like stevia too, and def go easy on all other forms of sugar and try especially to stay away from chemically produced sweeteners too.

Haven't soaked beans overnight. May try that! Never heard of Sally Fallon's noursing traditions. Will hunt for it at local library.

We are reading labels very carefully now too, avoiding anything with GMO or soy as well. It is scary what they are doing to the food supply with all this genetic modification. I too mostly stay on the outside walls of the grocery store.

Been eating organic breads such as Killer Dave's bread, which I really like. Haven't tried sprouted bread yet, although I've heard good things about it.

A friend of mine told me about a store called Trader Joe's located about an hour from here, and all of their goods/produce are organic yet priced more in the range of a big box store. I think we are going to make a trip there soon to check it out. Have you ever been to one?

Genesis and Ezekiel sprouted breads are available almost everywhere frozen.

A friend of mine told me about a store called Trader Joe's located about an hour from here, and all of their goods/produce are organic yet priced more in the range of a big box store. I think we are going to make a trip there soon to check it out. Have you ever been to one?

LOL Ms. T2W - I love your style! Of course you don't need a Trader Joe's ... you ARE Trader Joe!! :lol Wish I lived closer to you :) Thanks for all your helpful tips on organic foods and eating. I'm going to look for that book this week.

That rack in the kitchen is a couple weeks supply brought in from the food storage. We are really sticklers about rotation so we 'shop' from the storage and then we 'shop' at the market FOR the storage... we date all the homemade stuff. I just cut a cheddar I made last Sept. for my sons wedding at the farm yesterday. Yummy!

I am curious. Do you have any buckets of nasty (ok, some of it is actually pretty good) freeze dried/dehydrated stuff anywhere for that real emergency that may occur where you could run out of fresh stuff?

I dehydrate a lot of stuff in the Excalibur. Tomatoes, squash, onions, etc. I toss them in soups and stews and just eat them when I'm hungry. Favorite dehydrated thing ever? Fruit leathers :)


So yes I keep dehydrated stuff... Also have about 10 cases of MREs from one of the kids.

Have you done Lemons or Limes, I have an Excalibur also, but have not used it yet except to dry nuts...I want to do citrus because it seems so hard to preserve. If you did how did it turn out?

No citrus yet. I freeze citrus juices. I am experimenting with concentrating them first. So far it works great to just simmer them down... not sure how much vit. C is destroyed in the process though. To freeze I put juice in quart zip-locks and stack them flat.

I'll pop a few things in the dehydrator and let you know how they come out.

I looked up last night and so far it says citrus is the easiest to do...when you use the finished product...you remove the rind and grind the fruit...I was thinking that if you put it in water it might plump up again...or added to ice tea? Worth a try I think...
