What I did on my summer vacation
 
Really this is just what I keep handy to cook from... The main stash is in the pantry but it's too dark in there to get a pic (I tried).

98 ears of corn.
Butchered & froze 1/2 of a 900lbs Highland steer.
Green beans.
Zucchini.

Most of it went to the freezer, noT much canning this year. Still have a lot of grape jelly we (my wife) canned last year tho.

Did you raise the highland? I love their look... I have one very shaggy dun Dexter that almost looks like a Highland X.

Congrats on the corn... we got a huge infestation of ear worms this year and only salvaged some. Thankfully a good friend shared from her abundance and I froze enough for the year.

tomatoes, salsa, corn relish and dill pickles.

but since this is the first year I've ever canned, I think that's pretty good :)

Very, very good for a first year. My first year I made pickles and then was afraid to eat them after someone at work said 'you can get botulism from home canned food'... Scared me to death!:eek:

Well, what I did on summer vacation is not that important. What is important is to make a trip to see Titus2Woman, Margies3, and Shag. (Sorry, Timmy, can't stand the smell of beer, much less the taste. Of course I've never tasted it, so I guess that sounds like a "liberal statement!") Boy that would be some good eating, visiting these three! :icecream

And I'm not too far from Titus2Woman. Can't tell you where Titus 2. You might figure out who I am and where I live if I say too much! :happydance

I love canning! I didn't put in a garden this year, but tried with a few tomato plants, but that didn't amount to much either. We got frost here August 30! Last frost was in late June. So the growing season was too short. So we went to a local produce stand and bought 150 pounds of tomatoes, and canned those. Also put up some okra, green beans, corn and pickled jalapenos. Looking forward to some spicy salsa and tomato based soups this winter :)

Oh right! Give up!

You need one of dose big uns, 350 lbs, give you shade in the summer and keep you warm in winter!

We put up over 120 qts tomatoes, 140 qts green beans.

Still have carrots.

T2W... have you ever canned meat?

A lot of people up here in the north can meat. I've never done that. Just wondering if you have? Any tips, hints, or recipes?

There is nothing better than canned beef or venison. Especially the tough cuts and older or lean deer that would be dry and/or tough. I just cut in cubes, salt, pack jars with 1in of head space, fill with broth and follow the directions that came ith my pressure canner. It comes out soooo tender and ready to just heat and eat for a hearty winter meal in minutes... Like melt in your mouth pot-roast!

I tried to make both sauerkraut and Ginger Carrots. Made my own whey from organic yogurt. Both recipes called for 1 Tbsp of salt. It was so salty, I threw it all out.

Here's the recipe for the Gingered Carrots (from Nourishing Traditions)

4 cups grated carrots
1 Tbsp freshly grated ginger
1 Tbsp. sea salt
4 Tbsp. whey

Why would they want you to add that much salt? I know it keeps the carrots/cabbage from wilting and is a preservative, but that is too much. How much would you recommend?

The recipe for the sauerkraut was 1 tbsp to one head of shredded cabbage. It's just way too much salt for me.

Much better than not putting up at all if you have a hurricane, earthquake, or anything elses that clears grocery shelves. Most people have less than a weeks supply of food. Scary.

Thanks, I didn't know how much I was able to cut back. We will give it another whirl. I picked up a new food processor yesterday (this is my third one). That will make it easier to shred the carrots and cabbage.

Now, is there an easier way than pounding the vegetables for 10 minutes? I don't enjoy that.

Ohhh... you made me hungry! I am definitely going to try canning the venison my husband brings in this fall - can't wait! I've also heard of ladies who go ahead and buy hamburger meat when it is on sale, just put it raw in the jars with salt and can it, for a quick easy meal in minutes, not having to thaw the meat, then cook it! Haven't tried it yet, but want to do that too.

We have our fair share of "canned goods" from the store, as a backup in case of emergencies... but I hope to one day not to have to do that, and be able to can all of my own food...

Just letting you know - my sister told me, yesterday, that Sally is either updating her book or putting out a new one using less salt with fermenting.

If you run across the new book, let me know and if I find out about it, I'll do the same. :thumbsup
