Green Tomatoes?
 
I have pounds and pounds and pounds of green tomatoes. I was about to have a bumper crop of tomatoes this year, and the tomatoes were just about to begin ripening on the vine.. to be ready in another week or so. BUT... thanks to the chilly Canadian cold front that blew through ... we got frost the first night, down to 28 degrees. I had covered the plants, and they survived.

Then last night, the weatherman said it was to be a warmer night, around 30, but I still covered everything. Got up this morning, and could not believe my eyes - my thermometer was registering 21 degrees.

I was just sick. So I went out to the garden and sure enough, all the tomatoes, frozen on the vines, solid. It was a sickening sight for me.

So, after doing some research, and checking around, I have found out that even if the tomatoes ripen after being frozen, they are not safe to can. So, I have a TON of green tomatoes, some of which may ripen, and some which are too green, and I'll either need to make them into something, or throw them away.

Said all that to say this... beyond fried green tomatoes... does anyone have a great recipe or use for green tomatoes?

Wow, so sorry to hear about your tomatoes freezing!
Y'all are getting an early winter already?! Brrrr!

I'm sure you can find some good recipes for your green tomatoes.

I remember my Grandmother making pies using green tomatoes. As I recall the taste is similar to an apple pie.

Also, if you like chips and salsa you can make a salsa verde using green tomatoes or perhaps make a green tomato chutney.

Take a look on this site. They usually have a variety of different recipes to choose from and sometimes you can get more advice by reading some of the reviews on the recipes you are interested in.

Thanks for all the suggestions everyone! I have not made green tomato anything, except for fried green tomatoes. I am about to, though!

Green tomato pie sounds good, and I am going to try to make salsa verde too, as we do enjoy green chicken enchiladas with verde sauce. My family does not eat much pickles (only dill) and no relish, so that is not a viable option for us.

Has anyone had this happen to them before? Green tomatoes frozen on the vine?

Flaming - our neighbors are in the same boat as we are with frozen green tomatoes. My daughter's friend who lives next door and who is a first year college student, wanted to try a garden, as she saw my efforts at gardening, and thought she would like to try. All her tomatoes froze too. We are mourning the early deaths of our gardens together. :(

Thanks! Very helpful! I didn't think to do that. My head is just spinning looking at all these green tomatoes, and wondering what to do with them. Also, my local extension office said since the tomatoes have already been frozen, that they are not safe to can. So, I can only use freezer recipes. :(

Thanks MawMaw! I am planning on making most of them into salsa verde, and plan on baking lots of green chicken enchiladas this winter! :D

How about crab apple recipes? Anyone?

A friend of mine gave me a boatload of crab apples. I boiled them down last night, and will be using the juice from the boiled down apples in my morning smoothies. I made the remainder of the apples into applesauce. I don't really care for jellies or jams, or anything high in sugar.

Had poked around on the Internet for other ideas to using them beyond applesauce or as juice/cider. Most recipes involve a lot of sugar, which I am trying to avoid. So I was going to maybe play around with cooking them with chicken, like maybe a sweet and sour crab apple chicken? Anyone ever done this? LOL.

The only thing I've ever done with crab apples
is make jelly. The applesauce idea sounds good! :nod

sorry bout your maters! both are also good dried; we just dried a bunch of greenies, they are great that way.

Really? Interesting! ... So, did you cut them into quarters to dry? And then how do you plan to eat them after they have been dried?

I had the juice from the boiled down crab apples in my smoothie this morning, and it was pretty good. I am going to try to use the unsweetened applesauce in breads etc. Just curious if anyone had ever tried cooking crab apples in a meat dish. I haven't found any recipes for that.

Used my green tomatoes in a chicken spaghetti sauce. Family didn't know the difference! So - it can be done! Yeah!

Pictures are: Green tomatoes going into the pot, added a can of tomato paste and now we have normal looking spaghetti, and the final result (I cooked a spaghetti squash to go with the meal, served with whole wheat spaghetti, along with homemade garlic bread, homegrown lettuce and tomatoes, and homemade ranch dressing).
