Funfetti Cookies
 

Here is an interesting recipe that I have heard is really good. I am planning on making them this weekend! We'll see how they turn out.

Funfetti Cookies (serves 40)

1 pkg Pillsbury Funfetti cake mix
1/3 cup oil
2 eggs
1 tub Pillsbury Pink Vanilla Funfetti icing

Stir together dry cake mix, oil and eggs until thoroughly moistened. Stir in decorator sprinkles from the cake mix (if packaged separately). Shape into 1-inch balls. Flatten to approximately ¼ inch with bottom of lightly floured glass. Bake at 375 degrees for 6 to 8 minutes. Cool 1 minute and remove to cooling racks. Ice with frosting while cookies are still slightly warm. Sprinkle with Funfetti sprinkles immediately after frosting. Allow to sit a room temperature 30 minutes so frosting is not overly soft. Store in airtight container.

I really like the Pillsbury Funfetti cake mix with the Pink Vanilla Funfetti icing. I could imagine what the cookies taste like.
