Right now I am cooking cornbread for tomorrow's dressing. Then time to stick another pie in the oven.

First time in years that we are not traveling or hosting. Kristin might have handled it, but her ankles swell after a few hours. Baby is coming soon.

We plan to eat out. I don't think we have ever done that before. Less stress around here - and that's all good.

We have reservations for 12:30 PM at http://www.countryclubhotel.com/lake...-mo-dining.php They are having a Thanksgiving buffet with live music.

I really wanted to cook, and ensured Kristin I would "do it all".... she is too smart for that I guess. :ursofunny

Made the dressing for tomorrow and Harvest Salad and baked this cake!

Chocolate Velvet Cake

1 1/2 cups semisweet chocolate morsels
1/2 cup butter, softened
1 (16 oz) package light brown sugar
3 large eggs
2 cups all-purpose flour
1 t. baking soda
1/2 t. salt
1 (8 oz) container sour cream
1 cup hot water
2 t. vanilla extract

Melt semisweet chocolate morsels in a microwave-safe bowl for 30 - 60 seconds. Stir until smooth.

Beat butter and brown sugar at medium speed, beating about five minutes or until well blended. Add eggs, one at a time, beating until blended after each addition. Add melted chocolate, beating just until blended.

Sift together flour, baking soda, and salt. Gradually add to chocolate mixture alternately with sour cream, beginning and ending with flour mixutre. Beat at low speed just until blended after each addition. Gradually add 1 cup hot water in a slow, steady stream, beating at low speed just until blended. Stir in vanilla.

Spoon batter evenly into 3 greased and floured 9-inch round cake pans. Bake at 350 degrees for 25 to 30 minutes. Cool in pans on a wire rack for 10 minutes, then remove layers from pans, and let cool completely on wire rack.

Coconut-Pecan Frosting

1 (12 oz.) can evaporated milk
1 1/2 cups sugar
3/4 cup butter
6 egg yolks
1 1/2 t. vanilla
2 cups chopped pecans
1 1/2 cups sweetened flaked coconut

Stir together first four ingredients in a heavy 3-qt. saucepan over med heat; bring to a boil and cook, stirring constantly, 12 minute. Remove from heat; add remaining ingredients, and stir until frosting is cool and of spreading consistency.

Pumkin and apple pies, jello salad, spinach dip, and mise en place for some other stuff done today.

Tomorrow, the above, plus the kids are picking up a fried turkey from Popeye's (Yes -- the fast food chicken place! We'll give a full report ;)), spinach dip and sourdough bread, French onion soup, mulled wine, mulled cider, Martinelli's, Red Lobster cheese rolls, stuffing, green bean casserole, mashed potatoes, candied sweet potatoes (yes -- two potato dishes), glazed carrots, cranberry sauce, ice cream, coffee.

Pray for me.
