Can someone give me a quick and easy recipe for fried green tomatoes?

3 medium, firm green tomatoes
1/2 cup all-purpose flour 1/4 cup milk 2 beaten eggs 2/3 cup fine dry bread crumbs or cornmeal 1/4 cup olive oil 1/2 teaspoon salt 1/4 teaspoon pepper Method 1 Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt and pepper. Let tomato slices stand for 15 minutes. Meanwhile, place flour, milk, eggs, and bread crumbs in separate shallow dishes. 2 Heat 2 Tbsp of olive oil in a skillet on medium heat. Dip tomato slices in milk, then flour, then eggs, then bread crumbs. In the skillet, fry half of the coated tomato slices at a time, for 4-6 minutes on each side or until brown. As you cook the rest of the tomatoes, add olive oil as needed. Season to taste with salt and pepper. |

Barb, you can substitute buttermilk if you prefer.

Thanks, Cindy...a friend of my mom's gave her some tomatoes yesterday, so I'm going to make taco flavored burgers for lunch using the ripened tomatoes, and fry the green ones. :thumbsup

Ingredients
4 large green tomatoes 2 eggs 1/2 cup milk 1 cup all-purpose flour 1/2 cup cornmeal 1/2 cup bread crumbs 2 teaspoons coarse kosher salt 1/4 teaspoon ground black pepper 1 quart vegetable oil for frying Directions 1.Slice tomatoes 1/2 inch thick. Discard the ends. 2.Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat. 3.In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels. |

Fry sliced green tomatoes by simply dipping both sides of a slice in cornmeal which has had salt and pepper added and fry them in vegetable oil or bacon grease in a med-high heat pan. Brown both sides of the tomatoes, then turn down the heat and simmer until the tomato is soft.
Simple and delicious. |
