Diabetic recipies?
I would like some good diabetic recepies if anyone has some to share.

However, until I heal better from my recent surgery I will have to wait. I am doing minimum posting as of now. |
Down Home Greens Sauté
Leafy greens are brimming with nutrients—a real springtime tonic. Smoke and salt from the bacon balance their slight bitterness. You can use any combination you like, and I urge you to try ones you have never tried before. At this time of year, they are at their most tender and sweet. If there are tiny turnips attached, so much the better. —Suzanne Butler, Culinary Consultant Prep Time: 20 minutes Cook Time: 7 minutes Serves: 4 Serving Size: 1/4 of the recipe Ingredients # 1 ounce Canadian bacon, lean # 3 cups collard greens, fresh # 3 cups turnip greens, fresh # 3 cups mustard greens, fresh # 1 teaspoon olive oil # 1 cup onions, chopped Preparation 1. Cut the Canadian bacon into small pieces. 2. Remove and discard the stems from all the greens, wash and cut into ½-inch strips. 3. Heat the oil in a high-sided skillet on medium high. Sauté the bacon and onions together until the onions are wilted, 2 minutes. 4. Add the greens, stir to mix and reduce the heat to medium. Cover and cook 5 minutes, or until greens are tender—but not mushy. The greens should still be green! |
Cornbread-Stuffed Pork Chops
Prep Time: 20 minutes Cook Time: 50 minutes Serves: 4 Ingredients # 1 pound pork sirloin chop, raw boneless # 1/2 yellow onion, whole # 1/2 bell pepper, green, medium # 1 tablespoon margarine, canola-based, trans-fat free # 2 pieces cornbread 2.5 x 2.5 x 1.5 inch piece # 1/2 cup corn, yellow, frozen # 2 tablespoons Pimientos, cnd # 1/4 teaspoon salt # 1/8 teaspoon black pepper # 1/8 teaspoon cumin, ground Preparation 1. Preheat oven to 375°F. 2. Trim any visible fat from pork. Cut a pocket in each chop by cutting from the fat side almost to the other side. 3. Peel and chop onion; wash and chop green pepper. 4. For stuffing, cook onion and green pepper in margarine in a small saucepan until tender but not brown. Remove from heat. 5. Crumble cornbread and add to saucepan, along with corn (thawed), pimiento, salt, pepper and cumin. 6. Spoon one-fourth of the stuffing into each pork chop. Secure with wooden toothpicks. 7. Place chops on a rack in a shallow roasting pan, lightly coated with cooking spray. Bake for 40 to 50 minutes, or until no pink remains. 8. Remove wooden toothpicks. Serve immediately with applesauce or poached apple slices, if desired. |

Bean and Cheese Burrito
Prep Time: 5 minutes or less Cook Time: 15 minutes Serves: 1 Ingredients # 1 tortilla wrap, wheat, 11" diameter # 2 tablespoons onion, green, chopped # 1 teaspoon canola oil # 1/3 cup refried beans, canned, fat-free # 1 ounce low-fat cheddar cheese # 1/2 cup lettuce, shredded # 2 tablespoons salsa # 1 cup blueberries, fresh or frozen # 6 ounces yogurt, fat-free, favorite flavor # 2 tablespoons almonds, slivered Preparation 1. Preheat oven to 350°F. 2. Wash and chop onion. Heat oil in a small skillet over medium-high heat and add onion. Cook, stirring frequently, until tender. 3. Reduce heat to medium, and add refried beans. Cook and stir until heated through. 4. Spoon bean mixture onto tortilla just below the center. Sprinkle with shredded cheese. 5. Fold edge nearest filling up and over just until mixture is covered. Fold in 2 sides just until they meet; roll up. 6. Place on a baking sheet lightly coated with non-stick cooking spray. 7. Bake for about 10 minutes or until heated through. Serve with shredded lettuce and salsa. 8. Enjoy fresh (washed) or frozen (thawed) blueberries, yogurt and almonds for dessert. |
Easy Cheesy Chicken Skillet
Prep Time: 15 minutes Cook Time: 15 minutes Serves: 1 Ingredients # 6 ounces boneless/skinless chicken breast, raw # 1/2 cup zucchini, fresh # 2 tablespoons onion, green, chopped # 1 potato, medium, baked # 1 teaspoon canola oil # 1/2 cup carrots, slices # 1 teaspoon soy sauce, reduced sodium # 1 ounce low-fat cheddar cheese # 2 tablespoons sour cream, fat-free # 1 cup mixed salad greens # 1/2 tomato, medium # 1 tablespoon fat-free salad dressing, favorite flavor # 2 teaspoons sunflower seeds, hulled, dry roasted, unsalted # 1 cup fresh grapes (any color) Preparation 1. Cut chicken breast into 3/4-inch pieces; set aside. 2. Wash zucchini and cut into thin slices; set aside. Wash onion; chop finely and set aside. 3. Wash and scrub potato. Pierce several times with a fork. Wrap in paper towel and microwave on high for 3 to 5 minutes until tender, turning over after 2 minutes. 4. Meanwhile, heat oil in a non-stick skillet over medium-high heat. 5. Add chicken to skillet and stir-fry for 4 to 5 minutes, or until chicken is no longer pink inside. Remove from skillet. 6. Add carrots and zucchini to skillet and stir-fry for another 4 to 5 minutes or until vegetables are crisp-tender. (Tossed salad may be prepared during this time.) 7. Add chicken and soy sauce; toss until chicken and vegetables are coated with soy sauce. 8. Sprinkle with onions and cheese. Cover skillet until cheese is melted. 9. Prepare tossed salad by washing mixed greens and tomato. Cut tomato into wedges. Toss with dressing and sunflower seeds. 10. Serve cheesy chicken mixture with a tossed salad, and baked potato topped with sour cream. 11. Enjoy fresh, washed grapes for dessert. |
I'm getting confused here. I thought Diabetic recipes were things that deal with sugar????

Not neccesarily..........
Basicly it is any recipe that is designed to help manage your blood sugar. However I don't have any recipes for diabetic desserts and would like some if you have them....... |
I just made this one this morning for my Bishop. :)
Very easy and very tasty, he Loooooooooooves it!!! Diabetic Lemon Pie 1 large pkg of sugar free vanilla pudding 1 large tub of Cool Whip 2 tubs of Lemon Crystal Light 2 Graham cracker crust Make pudding as directed, and lemon Crystal Light, and fold in cool whip. Place in crust and freeze. Take like lemon ice cream. :) |
