Re: Banana Nut Bread

This isn't the one that I use, but a guy at work made it and it's good. I'll post mine tonight.

Banana Nut Bread
Joseph Bouchard

1 ½ cup sugar
1 stick oleo at room temp.
3 ripe bananas, mashed
2 eggs
½ cup buttermilk
2 cups flour
¾ teaspoon soda
¾ teaspoon salt
1 teaspoon vanilla
½ to 1 cup pecans

Cream sugar and oleo together. Mix bananas, eggs and buttermilk together; add to first mixture. Combine flour with soda, salt and vanilla. Add to mixture, then add pecans.

Bake in two half pans, which have been well greased and floured. Bake at 325° for 1 hour or more.

Important to add ingredients as listed and do not use electric mixer.
