Interesting that the Kombucha has helped your GERD. I will pass that on to a family member who is struggling with that disease too.

How does your wife make Kombucha?
Start with Nourishing Traditions by Sally Fallon.

http://www.barnesandnoble.com/w/nour...=9780967089737

This is where we started, and my wife then, just began reading and reading.

She read Nutrition and Physical Degeneration, By Dr. Weston Price, the book that convinced me.

http://www.amazon.com/Nutrition-Phys.../dp/0916764206

Then Deep Nutrition, by Dr. Catherine Shannahan.

http://www.amazon.com/Deep-Nutrition.../dp/0615228380

Eat Fat, Lose Fat by Dr. Mary Enig

http://www.amazon.com/Eat-Fat-Lose-H.../dp/0452285666

And others, too.

All of the information is there. It's a lot of technical reading and my wife can do a better job explaining it. I'm the bank, she's the homemaker!

She has documented some of these things at her blog:

http://thehomemission.wordpress.com/

Look for any entry titled "Insulting Our Bodies..."

As far as making Kombucha at home, I don't really know what she does. It involves a scoby, which is a colony of living bacteria, and purified/filtered water, organic white sugar, and organic tea, usually black, plus the necessary jars and time it takes.

I will ask her for instructions or a website she recommends.

Re: Facts, Lies or Truth About Healthy Living?

As far as the legal rammifications of buying raw milk illegally...

We live in a city, in an apartment. If we were to obtain raw milk in WI illegally, we would be putting a farmer in serious jeopardy.

It's not about skirting the law because it's a stupid law. It's about protecting someone else's livelihood and investment.

WI is overrun with special interest dairy groups, all bent on making sure the USA's "dairy state", stays in control of it's milk supply.

You wouldn't think something as simple and pure as milk would become a politicized issue, but man, you've never seen so many people get up in arms against the sale of unpasteurized milk.

The fight for our food is an unseen war being waged against us daily.

Re: Facts, Lies or Truth About Healthy Living?

Now in Wisconsin you are allowed by law to receive free raw milk for human consumption from a licensed diary farm (licensed milk producer). Yet, Wisconsin law against Raw Milk is sketchy, and the farmer cannot sell you Raw milk, but can give you raw. The farmer is also allowed to drink his own raw milk and give it to his family members and guests.

There is a farm that, per the law, allows you to "become" an employee, which then allows them to give/pay you in raw milk. You have to sign papers and go through the whole process to make it legit, and once a month, you have to come and sweep a floor, or whatever, to prove employment.

My mom and stepdad do this, but the farm is an hour and a half away, and can't easily be reached by us on any regular basis, especially for me to take an afternoon and drive up to work a shift, just so we can get their raw, organic grass fed milk legally.

If anyone stays up on the raw milk debate in WI, you'll likely be aware of some of the lawsuits that have occured. There have been some wins, but also some losses. The risk is great, if loss occurs. I would never try to convince a farmer to risk his livelihood just so I can have access to his milk.

Last year, there was some momentum to get a bill into the state assembly to look at changing the law, but the politicians who were being counted on, balked last minute.

(Plus, right now, my wife is pregnant, and starting raw milk while pregnant is not recommended, even by raw milk advocates, since it's an adjustment to the system.)

If anyone is interested in reading more, check out the following book:

The Untold Story of Milk by Dr. Ron Schmid.

I never met a farmer who was clueless to the laws which prohibit him or her to trade seeds or sell raw milk. Monsanto law suits took care of the seed trading, and the United States government educated the farmer. You trying to convince a farmer to "risk" his lively hood for a pail of raw milk is like being a stranger asking him if you can grow reefer in the middle of his corn field.

Thanks for providing the helpful info and links, VS! I have not read any of these books, but have certainly read my share of online articles and studies to know that there has to be some connection between the amount of wheat, sugar and chemically processed oils that we eat, and why we have such an explosion of obesity.

I think each of us needs to pay attention to our bodies, and as we try different things, see what works, and what doesn't. We don't all have the same metabolic processes that go on, or the same predisposition to a certain disease. I think more than ever, we need to be aware of how our bodies process, and what works for us, may not work for our husband or wife, or children.

And... as has already been pointed out - for every study that you have telling you the dangers of something - you have others pointing out the benefits. Who to believe?

This again is where being led of the spirit, and being sensitive to how your body operates comes in to play. It doesn't matter if the doctors say you need more ***, if you try that, and it makes you feel worse, stop it. It is not right for you.

I have tried the bread, but found the bread really dry. I think I would rather do without bread than eat that. Just my opinion, of course. Have you tried them?
