Girl, I have to log out. I'm not even close to having my house ready for company. I am not relishing the idea of cooking for so many for TWO WEEKS!!

Yea, I'll remember the onion thing - well, I'll just use my chopper! lol

Thanks, hopefully I will get some help without having to ask. At least my husband is also a great cook - he will help with that - BUT - he doesn't do dishes!

Slushy Punch


2 1/2 c. sugar
3 c. water

Just wanted you to know that everyone LOVED your punch recipe!!!! I skipped freezing it in cake pans and put it directly into quart size freezer bags which I filled half way full. When I poured the 7-UP over the frozen chunks, I broke them up with an ice pick - worked perfect.

I poured the punch at 3:00, we played four games and the punch was ready! So, easy!!! I can't thank you enough!!!

I had people purchasing some of the ingredients for me so that I didn't have to pay for everything. I was disappointed that the ingredients, except for the 7-UP, were off brands, but it was still very good. I can only imagine how much better it would have tasted using Minute Maid for the Orange juice and Lemonade and Dole for the pineapple juice. I have another shower in November and might use it there and buy the ingredients myself this time. lol!

The women that was supposed to make the cake had to work and so I had to come up with something at, pretty much, the last minute. I found this Tres Leche cake recipe (printed below). Everyone loved it. I doubled the recipe and the picture is showing a 12x18 Wilton pan. You are supposed to dump this into a larger pan to pour the three milks after it's baked, but I didn't have a bigger pan than this. No one seemed to mind.

All my other pictures didn't come out well because I can't stand to take pictures being you have to stand still for 3 more seconds. LOL! The only one that came out that was pretty decent is the cake picture. LOL!



Tres Leche Cake

7 large eggs, separated
1/2 c. butter, softened
1 cup sugar
2 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 tsp. vanilla extract
1 (14 oz) can sweetened condensed milk
1 (12 oz) can evaporated milk
3/4 cup whipping cream
Fluffy Frosting

1. Beat egg yolks, butter and sugar at medium speed with an electric mixer 2 minutes or until mixture is creamy.
2. Combine flour, baking powder and salt. Add to egg yolk mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla.
3. Beat egg whites until stiff; fold gently into batter. Pour batter into a greased and floured 13x9-inch pan.
4. Bake at 350 for 25 minutes or until a wooden pick inserted in center comes out clean. Let stand 10 minutes.
5. Pierce top of cake several times with a small wooden skewer. Stir together condensed milk, evaporated milk and cream; gradually pour and spread over warm cake. (Pour about 1/4 cup at a a time, allowing mixture to soak into cake before pouring more.) Let stand 2 hours; cover and chill overnight, if desired. Spread top of cake with Fluffy Frosting before serving.

Fluffy Frosting

6 egg whites
1 cup sugar
1 cup light corn syrup
1 Tbsp fresh lemon juice (about 1/2 lemon)

1. Pour water to a depth of 1 1/2 inches into bottom of double boiler over medium-high heat; bring to a boil. Reduce heat to a gentle boil. Place egg whites and sugar in top of double boiler. Beat at high speed with an electric mixer 5 to 7 minutes or until stiff peaks form. Gradually pour in corn syrup and lemon juice, beating 7 minutes or until spreading consistency.

My advice is to lead with the left ladies, then finish up with the right hook!



Course, don't you think that would be more appropiate?
