Here's what I love to do with pork chops (boneless).

Get your pan nice and hot. Brown them on one side and while that's happening add sliced onion so the onion starts to brown a bit too. Add salt and pepper.

Turn the chops over to brown on the other side. Add a bunch of sliced mushrooms. Allow them to cook a bit and the onion to continue to soften even to the point of caramelizing a bit.

Then put a cover over top and let them continue to cook on low heat until nice and tender.

Eat! They're wonderful cooked like this! Rustic, simple and delicious!
