I assume you're referring to Exodus 21:1-6 where a slave could waive his right to freedom in his 7th year and remain on as a perpetual slave. The visible sign of decision this was that he would declare that before the judges and then one of his ears would be pierced. There is a passage referring to this in the Old Testament that the writer of Hebrews applies to Jesus. In Hebrews 10:5 the writer quotes Psalm 40:6. Because the author of Hebrews used the LXX or Greek Bible it says, "sacrifice and offering you did not desire but a body have you prepared for me." This refers to the incarnation of Christ to do the will of God. However, if you go to the Hebrew Scriptures, that passage reads somewhat different. In the NKJV and others it says, "sacrifice and offering You did not desire; My ears You have opened." Some Bibles say, "My ears You have pierced." This is in reference to the perpetual voluntary servitude of a slave in the Old Testament and pictures Jesus as the willing and obedient servant of YHWH. So, symbolically and to fulfill the type, Jesus had at least one ear pierced.
