People of all races in America will probably take the opportunity to enjoy fried chicken at least one time in their life.
There are people of all races who loves fried chicken.
That being said, the stereotype about black folks, fried chicken and watermelons is a negative stereotype that was born during a time of hatred, by people who were hateful.
So to serve fried chicken tomorrow, February whatever, is nothing.
To HONOR Black History Month with fried chicken and/or watermelon reflects very poorly on the manners of the person(s) who made that decision.
It wasn't done on accident. It was just a stupid thing to do.
