Prax, most places I've ever been that cook catfish cook it so it tastes really good. Preparation isn't that difficult, IMO, but it is pretty fishy tasting if someone doesn't know what they are doing... believe me on that. First time I cooked any, I learned my lesson.

No matter how catfish is prepared, it does have a stronger flavor than other fish, it seems like to me. I've never had it blackened, but that sounds good. At home I broil it with lemon and herbs, but I love it fried, especially with a little hot sauce in the batter.

Yum!

Crawdads aren't bad either, but there sure isn't much meat in a crawdad.

No one in their right mind eats rooster eggs. Crawdads and catfish, though, those are good stuff!

A lot of time spent in Louisiana and Mississippi as a child put me off crawdads or catfish eating. Loved to catch them though.

Prax,
I used to manage a Piccadilly, HQ Baton Rough. Catfish and crawdads were daily fare. What your talking about "sucking heads" is the boiled crawfish. But you can also get peeled and packaged. You should try them if you like shrimp, crawdads and shrimp are interchangeable in recipes. IMO you can't beat crawfish, Jambalaya, or Scampi.
If you have pond raised catfish, that stops the fear of eating the bottom feeders. If you like them fried, while they are still frozen, bread them in cor meal seasoned with salt, and plenty of red pepper.

Eat the crawdads the meat in the head.They are good,but you have to eat alot of them to get to alot of meat,kinda like eat squirrel or rabbit.
