Here in Arizona the local Safeway grocery store bakes these incredible carrot cake muffins....they have a very small dallop of cream cheese icing on the top.......and then you bite into them and they have actually injected the icing into the center and the dollop on the top is just the beginning...  of a very decadent muffin.
