I wouldn't like it on tuna (then again, I don't really like tuna), but I prefer Provolone cheese for my slices. Or just to eat directly, I love Colby/Monterey Jack marbled together.

Fresh tuna is excellent. My wife had a cousin or something that ran a fishing boat somewhere up around Alaska or somewhere (can't remember) and he would give us fresh tuna. The stuff in a can is to fresh tuna what McRibs are to genuine bbq ribs.
