You gotta come visit us in Louisiana if you want some REAL Gumbo... we make it real with homemade roux in a big black cast iron skillet... cooked just dark enough and never left alone while in preparation. Den we took some good goose liver and some okra and set dat to boil while we put dat chicken and sausage or some shrimps and sausage wit some a dem der fresh shucked oyster in de wata with de roux! Add all dat slow and cover and let it cook all day and hold dem flavor in de pot. Den you cook some good long grained rice in de new fangled rice cooker (cook it nice and not too wet... jes plump). Den you feast yousef on dem der good Gumbo wit a lil file' on de top and a wedge of onion an some cornbread!
