If you are thinking linolium and don't have experience, you might want to get some good quality peel and press tiles. They can be lovely, will last years and if you buy and extra box or wind up with most of an extra box you can replace any that get damaged very easily. Again the floor needs to be immacuately clean.
Be sure that if you are painting over a gloss paint that you use a chemical prep or lightly sand and use a primer before you start. Also wash down all surfaces with a degreasing detergent. The prep work is 80% of a good paint job.
And most of all be sure you have excellent ventilation while working with chemicals like primers, paints and glues. If the kitchen does not have a lot of windows a ventilator is a good idea.

I've used muriatic acid. It's a rough chemical.
I'd rather pay to have Linoleum laid.
I'm getting ready to use Zinsser B.I.N Primer and Oil-based paint in a very small room with a very small window. Not looking forward to it. As a matter of fact, I might ditch the whole project. I can't stand the smell of oil-based paint. The Primer doesn't bother me as much, I use it all the time. Although, mainly in the spray can.
