Interesting that the Kombucha has helped your GERD. I will pass that on to a family member who is struggling with that disease too.
How does your wife make Kombucha?

Start with
Nourishing Traditions by Sally Fallon.

This is where we started, and my wife then, just began reading and reading.
She read
Nutrition and Physical Degeneration, By Dr. Weston Price, the book that convinced me.

Then
Deep Nutrition, by Dr. Catherine Shannahan.

Eat Fat, Lose Fat by Dr. Mary Enig

And others, too.
All of the information is there. It's a lot of technical reading and my wife can do a better job explaining it. I'm the bank, she's the homemaker!
She has documented some of these things at her blog:

Look for any entry titled "Insulting Our Bodies..."
As far as making Kombucha at home, I don't really know what she does. It involves a scoby, which is a colony of living bacteria, and purified/filtered water, organic white sugar, and organic tea, usually black, plus the necessary jars and time it takes.
I will ask her for instructions or a website she recommends.
