Lemon Blossoms Cookies
1 Box Lemon Cake Mix
¾ cup vegetable Oil
4 large Eggs
Directions
Use miniature muffin pan and spray with Pam. Combine cake mix, oil, eggs for two minutes with electric mixer until well blended.
Fill each muffin cup ½ full. (One good teaspoon is about right) Bake for 12 minutes @ 350. Remove immediately and place on a tea towel to cool.
ICING
4 cups confection sugar
1/3 cup lemon juice
Zest of one lemon
3 tablespoon of vegetable oil
3 tablespoon water
Directions
Whisk above ingredients until well blended. As soon as you remove roll in mixture and place on wire rack with wax paper below to catch drippings.
Let dry for 1 hour before storing in air tight container. (Can place in cupcake papers) Layer with wax paper between rows to keep from sticking together.
