You're assuming that people go "right back to eating unhealthy." We actually do a good job of eating healthy and staying active in our house--but we are NOT vegetarians/vegans. Ergo, it IS a departure for us set aside meat, dairy and all sugars.
So IF someone normally eats healthy, but they do a vegan or vegetarian fast for 21 days, you see that is a completely worthless endeavor? I don't; and your points about people going back to an unhealthy lifestyle is actually a strawman that has no bearing on the validity of the Daniel Fast.
