We have all kinds of food down here, but when you go and try the food the people you know who come from that particular country will tell you that it doesn't taste like it does in their country.
Same thing goes with states, Gumbo in Florida isn't fit to eat, and Boudin sold in Florida is gross. Yet, when you get to Richard's meat market in Abbeville Louisiana you get the best Boudin on the planet! I love Boudin, I can eat Boudin everyday, but I can't because I live in South Florida! Where no Boudin exists.

I'm not a big fan of Boudin, but have close friends in East Texas who make it, and it is pretty good. I LOVE east Texas and LA style gumbo, and have made it myself, but I agree... there is just something about eating gumbo in east Tx or La that is better than anywhere else!!!
