Problem with pigs is that they have NO sweat glands and are filled with toxins that they cannot perspire.

The ancient Israelites didn't know anything about toxins or sweat glands as it might relate to swine. Swine was forbidden on account of pagan associations.

The only dietary standard that Christians appear to be bound to is listed in the book of Acts. And I don't believe they were instituted on account of health benefits, but rather they were instituted on account of spiritual identity and the sacredness of life (life being in the blood). Here are the standards as I understand them:
Acts 15:28-29
28 For it seemed good to the Holy Ghost, and to us, to lay upon you no greater burden than these necessary things;
29 That ye abstain from meats offered to idols, and from blood, and from things strangled, and from fornication: from which if ye keep yourselves, ye shall do well. Fare ye well. Thus the standards are...
1.) A Christian is to not to knowingly eat ANY meat that has been sacrificed to an idol.
2.) A Christian is to abstain from any dish made primarily of blood or with blood being the main ingredient (blood sausage, blood soups, pinyin, or freshly drawn blood as found in Inuit and Maasaian foods).
3.) A Christian is to abstain from any meat from a beast that has been strangled as opposed to slaughtered, as the meat isn't properly bled and strangulation is an inhumane way of slaughtering an animal.
4.) A Christian is to abstain from sexual immorality. Notice "clean" and "unclean" meats are not mentioned. The issue is it having been sacrificed to an idol or not and blood. Thus, a properly slaughtered hog (unclean per the law) that hasn't been sacrificed to an idol is perfectly permissible to a Christian. However, beef (clean per the law) sacrificed to an idol and/or that has not been properly slaughtered and bled is not.
That's my understanding.

AND.......in reality only one of them is still practiced (somewhat) by the church. We really don't (in most cases) know if that chicken/cow/pig etc. was strangled or its throat cut...and really we don't care.
Everyone who eats at a Chinese restaurant has eaten food offered to idols. If you notice in many of them they actually have plates of food sitting around Buddha or the cat or whatever god they worship.

Uh oh! No more idolatrous Chinese food? Guess I will just have to make it at home, lol. Actually, we never eat out Chinese food very much as it always upsets my stomach. I can make Chinese food at home, and it doesn't bother me.

I got some sourdough starter a couple of weeks ago. Now, I have sourdough that is multiplying, and I am trying to keep up with it. Made a sourdough chocolate cake today, and sourdough rolls. YUM! I still have a ton of sourdough in my fridge. My family can't eat it all fast enough. I am going to be freezing some, and giving some away.
Anyone else ever bake with sourdough?

My wife makes homemade sour dough bread for her own starters on a semi-regular basis. Best breads ever!

Improperly prepared grains are, by and large, not good for you. Omega 6 fatty acids easily go rancid by the time you buy the prepared, preservative-ladden breads on the shelf. Not to mention all the other chemicals and garbage put into most bread products.
Or how so many breads and grain products have all the nutrients stripped away.
Or the phytic acid, an anti-nutrient that kills enzymes and keeps your body from properly absorbing what good things you do get from the foods you eat.
However, with all that in mind, the Nourishing Traditions method of grain preparation solves pretty much all the issues. But do you have access to all that is necessary for such a preparation? That is the hard question.
If not, grains are mostly bad news.

Oh yes, I totally agree that the homemade sourdough is awesome bread!
I've been making sourdough bread about every other day, along with sourdough pancakes, crackers, and sourdough chocolate cake (the moistest yummiest cake ever!) and have found that eating sourdough does not cause the same miserably full feeling in my tummy, as other wheat breads typically do. I do believe that the fermentation process involved in the sourdough really helps breakdown the enzymes in the flour to make it easier for the body to digest.
