The "extra pure" or "extra fine" olive oil has a distinct flavour, so for most cooking we use the regular olive oil. It doesn't impart the flavour to the food nearly as much.
But generally we use sunflower oil. We used to use peanut oil but my wife got a food intolerance to nuts so we switched to sunflower oil and olive oil just to prevent any possible issues.
Sometimes I put a dash of sesame seed oil if I'm feeling particularly east Asian when frying stuff up.
