Both cultures sought to perpetuate themselves and maintain a separate identity from the larger European culture. The Jews however, never sought converts and control. For Muslims, Europe is Dar al Harb.
For an historical example of how Islam interacts with a larger and older culture one need look no further than India. The repeated Muslim invasions and the rule of of the Moguls up until the time of the British Raj represents the bloodiest epic in human history.
The Persian civilization and Zoroastrianism - a thousands of years old culture - was wiped clean and replaced entirely by the mullahs. The Greek Civilizatiion that encompassed the Balkans, Asia Minor, the Middle East and Egypt was also almost completely wiped out.
