Pioneer Recipes

I have been looking at some older cookbooks and have wanted for some time go gather the old pioneer recipes. One thing I have noticed seems most of them do not call for as much sugar as our recipes do today. I think the reason is back in the day sugar was a valuable and expensive luxury to have.

If you have any old family recipes how about posting them here. I would love to compile a book of old family recipes.

If you know about how old it is post that also.
For example, your grandmothers, mothers recipe.

Thanks for sharing.

I will post some of mine later. I am trying to beat a deadline for my church cookbook.

I remember my grannie used to keep a jar of "liquid coffee' that she would use to make herself a single cup of coffee when she wanted it. My mama had the recipe down in an old cookbook she had. Not sure how "old" the actual recipe might be, but this a memory from the early 60's.

Liquid Coffee Concentrate

2 cups ground coffee
6 cups water

Add the coffee to the water and boil down to 2 cups liquid. Cool, bottle in sterile canning jars, and seal.
(Makes 2 cups liquid for 32 cups coffee)

To make 1 cup of coffee...

1 tablespoon coffee concentrate
1 cup boiling water

Add the concentrate to the boiling water. Makes a fine cup of coffee.

Lacey my grandmother used to boil her grounds in her coffee, then pour the coffee in her cup and then put the coffee from her cup into a saucer and drink it from the saucer.

I think it was the dutch way of drinking coffee.

Not a recipe, but an interesting FYI. King Arthur Flour sells a sourdough starter that is descended from a batch started in 1705. Can't get much more pioneer than that, though my Mother has some that was started by a ggggrandmother in the 1830's.

Your Mom's is still active? That is awesome.

I have trouble keeping mine going. I don't feed it as I should.

1860 Cake

2 cups white flour
2 cups sugar
1 cup cocoa
1 cup water
3/4 cup lard, melted
2 eggs
1 cup fresh churned buttermilk
2 teaspoons soda
pinch salt
2 teaspoons vanilla

Sift the first 3 ingredients. Add the next 3 ingredients and beat well. Add the other ingredients. Bake in a moderately hot oven in a long pan until done. Test with a broom straw to see if done. Use icing of your choice.

[for those that don't know lard is basically the same as shortening. And a moderately hot oven is 350 degrees.]
