Cast iron skillet is the only way to cook cornbread! I watched someone on the Food Network cook a cake with honey- he heated the honey before he mixed it into the cake batter. You might try that- You also need to spray your pan with Pam. If you used a skillet, be sure to cure it with oil.
Im Shockamooing all over my living room! Cast Iron is the ONLY way to cook cornbread (unless your my dear sainted grandmother who used a cornbread pan that closes and you flip half way thru.... )
really. go get yourself a cast iron skillet and cook up some mighty fine cornbread.

You people from the south are nuts
a good cast iron skillet will set you back no more than 15 bucks.
plus you can cook a lot more in it that that!
you can cook
bisquits
rolls
roux
brown gravy
cream gravy
fried eggs (I wouldnt scramble eggs in it unless it was well seasoned that might take you 5 years)
you can fry round steak or chicken.
a cast Iron skillet is a very usefull item!
(only thing better is a cast iron dutch oven!)

I cook my Spanish Rice in a cast iron dutch oven. Can't have a kitchen without stainless steel and cast iron!!!!
No cast iron skillets on glass top stoves, though.
I used mine on the glass top, but I set it very carefully on the top so as to not break the top. However, it is a dozzy to clean the stovetop afterwards.

We are not nuts, we know how to cook.
I agree with Ferd you must have iron skillets and dutch ovens. Best way to fry chicken is in a dutch oven.
