Well, the overall amount of flour in gumbo isn't that much. I think it is about 1 cup flour with 1 cup oil for the roux?

With everything I have studied about new and improved modern wheat and now knowing how I feel without eating it, I wouldn't "knowingly" add it to my food.

Turn back the clock? You turn back the clock when start eating real food, and do some hard exercise. Not just cardio, but real exercise, which means lifting heavy things.

No! I want to get the wheat back that has not been chemically modified!!! LOL
I do agree that exercise that involves exercising the muscles beyond the cardiovascular is necessary for good health as well.

The food conglomerates are big business, they use chemicals in the food because it makes them a mountain of profit.
Everything is about the money, food is just a commodity.
The love of money is destroying our foods.
we need to stop giving them our money and we will see the food corporations change their tune.

So... who to believe? The same goes for just about anything that involves a scientific study. How do you really know if the scientists haven't skewed the facts to make their study prove a theory they had before beginning the study? How many people were involved in the study? 2, 10 or 100,000? Most studies usually only use a few people, and they use those results to come to a conclusion, which is risky, in my opinion.
We have seen way too many "facts" that science has presented, to later become "fiction" as more science and evidence emerges.
I say we need to pay attention to our body. Try going off wheat. If it makes you feel better, then great, you probably need to stay away from it. If there is no change or difference by going off of it, then your body may not be affected by it.
I do not believe every single person reacts exactly the same way to the same things. Our blood types are different, the way our bodies metabolize fats and proteins can be different, and so... it has become my philosophy that instead of believing every single piece of literature that comes out for or against something... I listen to my body, and if trying something seems to make me feel better - great. I don't then go shoving that down everyone else's throat, making them do what I've done, because my body may work differently than theirs.
Instead... each one of us needs to pay attention to what makes us feel better, and what doesn't. This is my humble opinion.

When you have most of the population of a country living in urban areas where there is no access to food other than at a grocery store, that is almost impossible.
We are doing our best to grow and raise our own food as much as possible, even while knowing that it is night to impossible to completely exist without some modernization techniques and science.
