I catch myself saying things like didja instead of did you. As you said, I usually know what is correct, but it's like my brain is programmed to speak this goofy southern slang.
I didn't even realize until my daughter pointed it out to me that I say pilla and yella - - instead of pillow and yellow. SOUTHERN for sure!!!!
I'm working on it.
I also try HARD not to say "fixin to"

Okay, now you've gone to meddling - LOL!! I say "fixin to" all the time!
I was working in Houston with a girl from Yonkers, NY. One day she was so mad and said, "That's all you Texas people ever say - I'm fixin' to go here and I'm fixin' to go there."
After that passionate outburst, I decided that I would ALWAYS say - "Fixin' to!"
I don't know what set her off. All I said was, "If you are going to live in Texas, it's 'blue jeans' not 'dungarees'. It's 'purse' and not 'pocketbook'."

But is it really "blue jeans"? Thought it was just "jeans". If it ain't blue, it ain't jeans!

LOL! Isn't it like a Coke? No matter what brand, it's still a Coke? LOL!
But, I will admit to saying "jeans" when the ones I was wearing were black. LOL!
There are regional dialects of Texan, of course. I hear "Coke" for generic sweet, fizzy stuff around Austin some, but not that often. "Soda water" sometimes. (That one bugs me for some reason. I think of unflavored carbonated water, when I hear it. Not that there's anything wrong with that!)
Ever notice that "y'all" isn't always second person plural? "Is y'all's husband home?" And the "all" in it isn't always good enough? "I can take all of y'all!"
