I understand I Cor 7:5 is warning that if you defraud your spouse that you are setting them up for temptation. I cannot completely accept that I'm "encouraging them to do something they believe is wrong."

LOL! I think we should look at "setting them up for temptation" and stop right there, reflect on that for a bit. When we go on to completely accepting that we've encouraged them to do something that is wrong, we are missing the point - we are setting them up for temptation - that should be enough. In fact, that is the very thing we wanted to save our children from - temptation! Why would we want to hand that to our spouse?
Looking closer at
I Cor 8:12, we first of all, have to identify who is weak. Because the person is either not identifying who is weak or they don't care. I can't tell which it is by looking at this scripture. The definition of "wound" is pretty intense - you just keep hitting them with the temptation over and over and over until they cave.
12But when ye sin so against the brethren, and wound
[(to “thump”, that is, cudgel or pummel (properly with a stick or bastinado), but in any case by repeated blows;] their weak conscience, ye sin against Christ.
